Slow Cook Your Black-eyed Peas

I ran across a good black-eye pea recipe today that’s super easy to make. Actually it only takes about 15 minutes to put together and after that, you just let the slow cooker do the rest. This recipe make up to 8 servings.
1 pound dried black-eyed peas, sorted and rinsed
1 medium onion chopped
6 cups water
1 teaspoon salt
½ teaspoon black pepper
½ teaspoon red pepper, optional
Mix peas and onion with water; add salt and pepper in a 3 to 6 quart slow cooker. Cover and cook on high for 3 to 4 hours or until peas are fork tender. Add red pepper and cook on high for 10 more minutes.
This is a good recipe to try for Thanksgiving and Christmas dinner. It’s one less pot to worry about.
