Luscious lamb! Leg o' lamb, roasted rack of lamb...it is a whole lot easier than you think!

Even if you think lamb is greasy or gamey, this recipe will change your mind (it changed mine!).

The next time you find lamb on sale at the supermarket...and I used to find frozen New Zealand lamb at the Safeway fairly regularly and at amazingly affordable prices...give this a try. And if you have any left over, you can use it the next night for curry or Irish stew!

    Yum! That looks good, SV--even though I am not a huge fan of lamb, it looks yummy. Les absolutely loves lamb so perhaps I'll make it for him one of these days.

      See, that's what my attitude about lamb was, but the mint jelly makes all the difference in the world!

      Yes, the mint jelly is the best thing about lamb if you ask me!

      (and by the way--I also have to put my sausage on another plate away from the syrup).

      If your husband likes lamb, this is a really, really easy way to prepare it. While the oven is hot you can bake potatoes and just steam some asparagus to go with it. Add a green salad and some sorbet for dessert and you have a fabulous meal!

    I love lamb! And your recipe looks great!
    I had a weird lamb experience once. I visited a renaissance faire where there was supposed to be a big meal consisting of a lamb stew and other things. But for some reason, the entire crew of cooks got wasted on mead before the dinner and blew the whole thing. The guests were served mostly raw lamb in broth. Bleh...

    I don't eat a lot of lamb because we don't raise lamb but we do eat goat now and then.
    When cooked right it's great (just like anything else.)

    Sounds tasty. I have these Lamb Taquitos at a restaurant near by. They use pasture raised lamb with no hormones, no antibiotics, all natural. The lamb is not gamey at all and actually doesn't need mint jelly. Your recipe will be a nice twist one of these weekend. Thanks.

    Roast Lamb is the best roast meal one can get. For me I find garlic and rosemary goes best with lamb and then just make a gravy out of the juices with cornflour before serving.

    And nothing beats a lamb and ketchup sandwich the next day

    i only eat lamb and for 70$ you can get half of a whole lamb. nothing beats lamb with curry sauce, yum!!
