I started another thread for baked goodies and a couple of us slipped in some savory recipes too, so
I thought I'd start a separate thread for sharing savory appetizer, dip and snack recipes.

7 Layer Bean Dip Recipe
Ingredients
* 2 cups of refried beans, either from one 15-ounce can or homemade
* 1 teaspoon (or more) of bacon fat (or 1 strip of bacon, cooked and minced) optional
* 1 teaspoon of chipotle powder, Tabasco chipotle sauce, or adobo sauce, more to taste (or plain chili powder to taste)
* 1/4 to 1/2 teaspoon ground cumin
* Salt
* 1 cup shredded cheddar or Monterey Jack cheese
* 1/4 cup chopped green Anaheim chiles (canned) OR a Tbsp of chopped pickled jalapenos (more to taste)
* 1 avocado, peeled and chopped
* 1 tomato, cut in half horizontally, seeds and juice gently squeezed out and discarded, chopped
* 1 bundle of green onions, sliced
* 1/3 cup of sour cream
* 1/2 small can of sliced ripe black olives

Instructions
(1) Heat the refried beans in a medium size cast iron skillet. Stir in enough water to get a creamy, easily dip-able consistency, about 1/4 of a cup. Add add 1 teaspoon bacon fat to canned beans or more, or fry up a strip of bacon, chop it up fine and add that to the beans. If you are avoiding bacon use olive oil instead to create the correct consistency of the beans.

(2) Mix in the chipotle chili powder (or Tabasco or regular chili powder) and cumin to taste. The avocados and the sour cream will cool down the spiciness of the beans considerably, so you can be a bit more liberal with spices. Stir in salt to taste, depending on how salted your refried beans are to begin with, and depending on how salty the tortilla chips are that you are serving with the dip.

(3) Once the beans are hot and bubbly, spread them over the bottom of a warmed serving dish (pyrex baking dish). Immediately add the shredded cheese so that the heat from the beans helps partially melt the cheese.

(3) Layer on the chopped green chilies, chopped avocado, chopped tomato. Spoon on the sour cream. Top with sliced green onions and olives.

Serve immediately with tortilla chips or corn chips. Serves 8.

1st Layer - Bean dip
2nd Layer - Cheese
3rd Layer - Avocado chopped or Guacamole
4th Layer - Sour cream
5th Layer - Tomatoes
6th Layer - Green onions
7th Layer - Black olives

    Found you. The other week I walked into Spencers Deli and enjoyed a few of Mama's snacks. The simplest being a thick pancake enfolded around a sweet ricotta cheese mixture and dusted with icing sugar. It was good, as has everything been that I tried there!

    I make this stuff every single year and every single year, it's gobbled up almost immediately. I have no idea what to call it though?

    1 package of pepperoni
    1 package of li'l franks (those tiny hotdog things)
    1 package of pre-cooked frozen meatballs (or as many as you like - I always add a ton
    1 jar chili sauce
    1 jar barbecue sauce
    1 jar spaghetti sauce

    If you have a lot of meat, you might want to add another jar of spaghetti sauce.

    Place all ingredients in a crockpot and cook on low for approx 4 fours - however, if your crockpot is entering menopause like mine and cooks extremely hot, you might want to set it for 2-3 hours and then just watch it. Nothing really has to "cook" per se, you just want the flavors to marry.

      We have a similar recipe, but it's just the little hot dogs, and some ketchup and grape jelly - cook until the flavors taste better than they sound

      Make two batches of the 7 layer bean dip because it goes really fast. Most people prefer corn chips or tortilla chips. I like another variation. The second batch I layer on soft tortillas and then roll them (like a jellyroll), then I cut them into inch rounds.

    Yay, a savory thread. I've got a few, but I'll just share one or two.

    My husband's favorite are 'bacon roll-ups'.
    (IMO an oddly put together but surprisingly tasty little tidbit. Do not inform your cardiologist you are about to make (or eat) this dish!)

    1 lb bacon (less if you're making a smaller batch, obviously.)
    A loaf of white bread
    1 8 ounce container of softened cream cheese
    2 tbs. butter, softened
    1 package onion soup mix

    Mix together cream cheese, butter, and soup mix until well combined. Spread on slices of bread and then cube them in about 2-inch cubes. Wrap each bread cube in a slice of bacon and secure with a toothpick. Place roll-ups on a cookie sheet and bake at 350 degrees until bacon is crisp. Serve warm.


    My personal favorite, though, is Boursin. It is best with the freshest herbs you can find.

    8 ounces cream cheese, softened.
    2 tbs. butter, softened
    1 tbs. chives
    1 tbs. parsley
    1 tbs fresh garlic, minced
    1 tbs dill

    I pulse it in my food processor. First the herbs, then I add the cheese and butter. It is a wonderful dip for vegetables, but make sure your partner has some too before you try to kiss them! (It also keeps vampires away. )

    Oh I love this thread.........I am much more of a savouries person.
    I do have to confess, I am very bad at recipes...I have a few things that I throw together that are renowned for tasty qualities but I cannot follow a recipe to save my life.
    So TT, now you know
    A fruity starter, smash up a cup full of rasperries, add a table spoon of cointreau...fan a melon slice and drizzle raspberry coulis across back and forth. Easy appetizer!

    Shrimp Dip
    Ingredients
    * 1 (8 ounce) package cream cheese, softened
    * 2 (4 ounce) cans small shrimp, drained (or fresh caught, if your are lucky like me)
    * 1 (8 ounce) jar cocktail sauce
    * 1 cup shredded mozzarella cheese
    * 1/2 red bell pepper, diced
    * 1/2 green bell pepper, diced
    * assorted crackers for dipping

    Instructions
    (1) Spread cream cheese in an even layer on a serving dish or in the bottom of a glass pie pan.
    (2) Combine shrimp with cocktail sauce in a bowl and spread evenly over the cream cheese layer.
    (3) Sprinkle with mozzarella cheese, covering the shrimp layer as completely as possible. Sprinkle the red and green bell pepper over the cheese layer. Serve with crackers.

      My mother's idea of "presentation" was to leave the cream cheese in a block and pour the shrimp/cocktail sauce over the top. Triscuits were required for that one, although we had other crackers for other appetizers and dips. Christmas Eve was always a finger food holiday at our house.

      The other constant was a fondue pot full of Velveeta and salsa. Actually, that was really tasty and filled your "fake cheese" quota for the year.

    We use lettuce on ours and don't heat the beans. If you sprinkle the tomatoes, olives, and green onions over the lettuce it makes for a very attractive and healthy-looking dish. With fat free beans and sour cream, it's really not too bad for you. The hard part is spreading the guacamole and sour cream without mixing them with the beans or each other!

      I've never added lettuce but I may give that a whirl now. And you're right about the spreading and separating. It's a challenge ... lol
