You're going to laugh. I think it's funny. I was in 7th grade and took a cooking class. Not funny yet? Here comes I had already been reading macaroni and cheese boxes at this point. I learned Kraft is the same as generic! And spagetti is real good when you read the box! That's when I said this is a joke and began reading my grams Betty Crocker books. Thanks for reminding me I completely forgot about the "cooking" class.

Oh, OK I could do that
OK< lemme see for the vegan version what you'll need:
An assortment of solid (non watery) veggies (Carrots, broccoli, green beans, onions, etc - whatever plain jane veggies you can find, fresh or frozen, doesn't matter)
Dairy free bread crumbs (for vegetarian not vegan recipes just use whatever
) Using regular bread may or may not work well in this recipe, since there are few binders.
Vegetarian refried beans.
Mustard, ketchup, BBQ sauce (you can get vegan versions of all of these where applicable) Worcestershire sauce, if you're not vegan (it has a little bit of anchovies in it - so little in fact it doesn't even trigger my allergy, so I used it. Plus, I hate anchovies, so I didn't mind the fact that they died to make the sauce
)
Non dairy Parmesan cheese. ("veggie slices" makes a decent one).
Erm, I think that's all I used...OK! So,
Cook veggies thoroughly so they can be mashed with a vengeance. Then, mash them until they are basically a big pile of veggie mush.
Add beans, stir.
Add bread crumbs, parmesan cheese, stir.
Add liquid condiments (except BBQ sauce), stir.
When you are done, you should have a fairly stiff mixture. If you've used too much liquid, you can add more bread crumbs, cheese or even flour and wheat germ. Actually, it's a good idea to add the wheat germ in anyway. It's good for you. Eat it.
Mold into whatever shape you want - coat in BBQ and bake at 350 degrees until heated through.
Thats it!
Oh, I forgot! Add minced garlic for a kick and make the gravy out of vegetarian bullion, corn starch, spices (whatever you want, but you can use the Worcestershire sauce if you aren't opposed) and make it like regular gravy. you won't have fatty drippings like you would with a regular meatloaf, so don't bother with the pan if you don't feel like it.
