I know some of you BC'ers are great cooks and/or recipe bloggers. I, however, am not. Would you mind sharing a pasta recipe here or posting a link to one?

    I use olive oil, spinach, garlic, sundried tomatoes and pinenuts over pasta... MMMMMM!

    I'm glad I'm first cos mine will be the simplest, 1 tin of tomatoes, pound and a half of lamb's mince and spaghetti. and that's it, add your own herbs and spices and just gorge.

    Here is a recipe I posted on my blog the other day... yum!

    * 2 zucchini, julienne or cut into ribbons
    * 4 cloves garlic, chopped
    * 2 shallots, diced
    * 3 tomatoes, diced
    * 4 tsp olive oil
    * salt and pepper
    * crushed red pepper flakes to taste
    * 8 oz (1/2 lb) Barilla plus angel hair pasta
    * 1/4 cup fat free chicken or vegetable broth

    In a large pot of salted boiling water, cook pasta according to instructions.
    While pasta is cooking, in a large saute pan, heat pan on medium-high flame, add oil when pan is hot. Add garlic and shallots to the pan and saute about 1 minute. Add zucchini and season with salt and pepper. Cook about 2 minutes, add tomatoes, crushed red pepper flakes, parsley, chicken broth and adjust salt and pepper. Stir for another minute. Remove from flame.
    Drain pasta when done and mix well with zucchini. Serve with Parmesan.

    I make up spaghetti sauce recipes as I go, so I don't really have anything posted (although I might work one up, now that I think about it).     Here is a really simple recipe that is a cross between a mac'n'cheese and spaghetti. My family loves it.

    Beef Macaroni and Cheese
    1-pound box elbow macaroni
    2 tablespoons vegetable oil
    2 cups chopped green bell pepper
    2 cups chopped onion
    1 tablespoon chopped garlic
    2 pounds lean ground beef
    3 cups canned crushed tomatoes
    Salt and pepper
    1 teaspoon each dried basil, ground cumin, and dried oregano
    2 to 3 cups grated Cheddar

    Heat the oven to 350 degrees F.
    Cook the macaroni according to package directions; drain and set aside. Heat the oil in a skillet; add the peppers, onion, and garlic, and saute until soft. Add the ground beef and saute until browned. Add the tomatoes, salt and pepper, to taste, and the basil, cumin, and oregano. In a large bowl, combine the macaroni and the beef mixture. Spread this mixture into a 9 by 13-inch baking dish. Top with the cheese and bake for 20 to 25 minutes, or until the cheese is lightly browned and bubbly.

    Here a recipe I really enjoy, it's quite good for impressing the ladies too.

    Beans al a toastini:
    One tin of Heinz baked beans
    Four slices of white sliced bread
    Butter

    Open tin and lightly fluff your beans into the waiting sauce pan, cook slowly at a medium heat till they are no longer cold to the tongue.

    Place your now decanted slices of bread carefully into the toaster and toast till you see smoke coming out the top of the toaster, this is the time to fish them out with a knife, scrape off the charcoal noir bits and heavily coat them in butter.

    Empty your now hot beans onto the waiting toast and enjoy with a strong cup of tea while watching Coronation street.

      It's almost dinner time and reading your post put my stomach right off.
      You see I'm allergic to legumes - my body lacks the enzyme required to digest them. On the other hand, one of the few TV shows I do watch from time to time is Coronation Street.

      Don't worry there's no legumes in it, just baked beans. I'm a vegetarian I can't eat legumes, I think it's cruel how they keep them in small cages.

    I'm into fast, cheap, and easy. (sort of describes me )

    I start with some really flavorful extra virgin olive oil. I put in a clove or 2 of garlic, (or use garlic infused oil) Don't overcook, just lightly brown. I put in chopped broccoli (usually use frozen, as it's ready to go) and cook it lightly. Really not much more than warm it up. Frozen veggies don't require much cooking. Sprinkle red pepper flakes to taste, toss with whole grain pasta, and then a little shredded pecorino Romano to top it off.
    I usually have cooked pasta from a previous dinner, so I can have this on the table in 15 minutes.

    This is fast and easy...and yummy.

    Farfalle with Mushrooms & Peas

    1. cook pasta al dente
    2. while pasta cooks saute sliced mushrooms in butter or olive oil. season with salt and pepper.
    3. stir in some green peas (fresh or frozen)
    4. finish with lemon juice and quality grated parmesan
    5. drain pasta, reserving about a cup of pasta water
    6. gently fold pasta into mushroom and pea mixture, use some of the reserved pasta water to loosen mixture if it's too dry or stiff
    7. garnish with cracked black pepper, more grated parmesan and fresh chopped italian parsley

    Try this one of mine. Pasta Fagioli! I love this Italian dish. If you have any questions on how to do it, just email me or write me on here. I give the general way of cooking it. You can find varations online of course.

    My favorite pasta dish to make is pretty simple. It is a penne pasta with vodka sauce and Italian sausage, mushrooms and peperocinis.

    I typically brown the Italian sauasage (the hot kind) in a pan, then drain the grease one it is fully cooked. I then add roughly two dozen sliced mushrooms (preferrably fresh but canned will work)and a half dozen sliced pepperocini's. I prefer to remove the cores/seeds but I know people who like to keep them in. I toss and fry everything on low heat until the mushrooms are cooked.

    I then add the meat/mushrooms/peperocinis to a vodka sauce. I make mine from scratch but any canned vodka sauce works just fine when you are starting out. Keep in mind the more expensive ones aren't always better. I then heat the sauce at a low heat while I boil the penne pasta. Once the pasta is drain and the sauce heated you serve.

    Once you get good at it the whole meal probably takes 20-30 minutes to make, and it serves ~4 people.
