I have a dinner that I have to make cornbread for...

And I JUST freaking remembered.

I don't have any ingredients in the house to make "CORN" bread... And the time it would take me to drive into town to get to the store and back - would mean the dinner would be over.

So I just scoured my cabinets - and I have corn bread stuffing - and half of a jiffy "corn bread" mix.

I only have half and half...

(hubby drank all the milk last night with cookies...)

So this is what I did.... And I have NO freaking idea if it's going to work.

Took the box ofMrs cubbisons corn bread stuffing...
added:
Half box Jiffy mix
3/4 cup half and half (oh my gosh - fattening)
2 eggs
Tablespoon dried onion
Fresh Dill from garden
half tablespoon shedd's spread...

I just blended it --- and it "smelled" ok...

texture was a little lumpier than normal.

Put it in the oven at 390...

What do you think?

Will it turn out ok?

Freak - I hate my memory at times.

    So you didnt get to add any milk?

      Just used half and half... (milk product - fattening - like whipping cream but a bit lighter... Half milk - half cream)

      You think it will work? Or will the thickness of it screw it up?

      Oh ok - in that case you should be fine, may pay to keep an eye on it though, poke a skewer into it once the cooking time is over to make sure its cooked all the way through.

      But a good use of substitutes you've done there - thats what macguyver would do

      As long as the lumps are moist lumps and not pockets of dry ingredients you'll be ok though.

    OK - it never "rose" - and I had it in a flat pan... So it's very thin...

    BUT --- I cut it into squares... and it's tasty... thin... but it will go VERY well with Chili..

    It has that "stuffing" kind of flavor - corn bread grit...

    Too bad it didn't rise tho...

    I am going to let the squares cool off...

    Not bad for an emergency recipe...

    LOL!

    THanks guys - I was sitting here waiting for disaster of epic proportions and just needed a little hand holding.

      A lack of baking powder/soda in the stuffing could be why it didnt rise

      Ayuh - prolly right - didn't think about it... BUT - there ya go!

      It tastes pretty yummy...

      And these folks are like our best friends (band mates) - so they have had my cooking before - and I'm gonna tell them exactly what I did. LOL!

      So this could be a test of friendship... LMAO!

    But - we're a GARAGE band - I'll post eventually - we have a Gig at a local Concert here - and we only have 10 FULLY developed songs.

    WARNING - those are UN-professional recordings - we don't understand our system - AND AND AND --- those are first to 3rd takes on the song.

    (first time playing them all the way through - after we created them.)

    I just don't have internet speed to pass them to anyone anymore - I quit paying 100 bucks extra a month to have faster internet - so now it's like dial up.
