      That's interesting. Never thought of cracked pepper with Cheese. Used to make them with paprika or cayenne pepper. Cheers Chef.

    I make all of our bread at home. Most of my recipes involve techniques that either need to be taught or at least you need photos or good illustrations. I'll see what I can find wen I get home.

      Hey. I'm a baker myself. So if your recipe follows standard breadmaking methods then it shouldn't be a problem for me. Cheers.

      Cool, so if I say stretch and fold 3 times at 15 minute intervals and then let rise covered in a couche you will know what I mean?

      Actually, no, its the best Ciabatta you have ever tasted. And it only takes two days to make including fermenting the poolish.

      Although, if you have a sourdough starter, you can use that in place of the poolish. Have you a sourdough starter?

    Did it in my bakery. Not sure if I can still rem how to. Poolish is easier.

    I'm a bread baking fanatic, but probably won't share the recipes here.

      Okay... will add a couple tips... I recently bought a perferated cooking sheet that helps to get a thicker, crisper crust. Also, on sourdoughs when looking for a good crust, turn oven heat down at half hour/15 minute intervals to replicate wood oven.

      Someone needs to start a bread baking group here. Any takers?
