I love Mexican food! One of the things I knew I would be giving up when I moved to South Africa was Mexican food, so I bought a Mexican cookbook, intent upon feeding my obsession myself.

Oddly, it turns out that I already knew how to make most of my favourites and have barely looked at the book! Fajitas are a favourite of mine, and so amazingly easy to prepare. My personal first choice is the chicken fajita, but you can have them with steak, seafood, vegetarian...even with scrambled eggs for breakfast!

    I really like the idea of a veggie or scrambled egg Fajita! I am a scrambled egg fanatic :D.

      These are great with eggs. I don't care for tofu myself, but I am sure there are other veggies that would saute up nicely with the peppers and onions and make a nice vegetarian fajita. How about eggplant strips or zucchini?

    And you know what... I'll give you a secret recipe... it's super easy.


    Hamburger Meat
    Can of Green Beans
    Tomato Sauce
    1 LARGE can of Diced Green Chilies
    Garlic
    Canned or Cooked Potatoes cut into small cubes
    Salt
    Pepper

    FLOUR TORTILLAS

    Brown Hamburger, drain grease
    add Green Beans, Green Chilies, potatoes, Garlic, salt, pepper
    pour in tomato sauce until comfortable consistency (you want a saucy meat but not drippy.)
    Stir and heat on med-low

    stir until cooked through and warm - the flavors mingled, stirring and of course tasting.

    Add more pepper or salt or garlic to taste if needed

    Warm flour tortillas on a cast iron flat pan, allowing light browning but not over all hardening.

    Place meat concoction in tortilla - and wrap like a burrito

    EAT --- and make about 5 more! LOL!

    You can mix things in with this - you can change things around... You can add cheese, refried beans, tomatoes, etc to your burrito!

    This was a staple in our house. I don't even have a name for it. But suffice it - my ex was Mexican - and this is a super simple recipe...

      Sounds yummy!

      We can't get the canned chilies here, I have to roast and dice them myself. Even the fresh ones are difficult to find. So when I do find them next time and I roast up a bunch, I'll give this a try.

      Tomorrow's post will be about fire roasting chilies and peppers and some things you can do with them.

      Oh I would have to go to the store and buy all the stuff anyway I do cook a lot too but it always tastes better when I eat out lol! Will definitely try the recipe one day soon tho.

      I'm making a list of things that are floating around in my head...things I've been cooking for 40 to 50 years. So far the list is up to 85 things and I keep remembering more and more dishes! Some of the recipes are from my Oregon grandmothers (potato salad, pie crust, turkey stuffing, etc), some of them are my own invention (pasta salad, tuna casserole) and some started out as recipes from books or magazines, but modified to fit my family's tastes and preferences (one kid won't eat peas, another kid won't eat recognizable egg, the other won't eat seafood...lots of modifications!!).

      My goal is to post one recipe a day until my brain is emptied. Right now I'm on a Mexican food kick...no telling what's next (Italian?).

      I am doing the same thing and now I have about 150 recipe posts up and another 50 of beer reviews.

      Asian cooking is totally foreign to me. Anything in that department? Preferably vegetarian.

      I love to eat it, but don't cook it much. I am partial to Taiwanese cuisine, particularly dim sum.

      I can give you a recipe for a broccoli beef stir-fry, the way the Taiwanese restaurants make it in Silicon Valley, but that's about it for Asian food.

    In Mauritius, where I live they don't sell really good fajitas. It's better to make it at home.

      Good Mexican food is difficult to find in South Africa, too. That's why I make it myself.

      I love Mauritian food, by the way. We had a Mauritian restaurant in my suburb for a while and the food was divine!
