Hey everyone...let's share our favorite dish on the grill! Here are two of mine: a BBQ sauce, and a Pork Rub.

Pork Rub:
With this dish I have two categories: a lot (tablespoon) and a little (teaspoon). Here are the spices you want a lot of: Old Bay (shocker right?), Paprika, and Chili Powder. Here are the spices you want a little of: Cumin, Cayenne, and Coriander. Gently rub the spice mixture all over your pork. Don't leave any flesh showing, you want to coat the whole thing. Put on some romantic music to make it feel more comfortable.
(use this for large hunks of pork that are to be slow cooked for hours)

BBQ Sauce:
1 14oz can of stock (beef or veggie)
1/4c rice vinegar (white will work)
1/4-1/2c Worcestershire
2 6oz cans tomato paste
1 15oz can tomato sauce
1/2c brown sugar
1/2c maple/pancake syrup
2tbl Old Bay
1tbl chili powder
1tbl paprika
2tsp cayenne
1tsp sage
1 tsp tumeric
3 cloves of garlic.
Simmer for 1 1/2 hours.

    I love making bacon-stuffed burgers on the grill. I make two small patties, layer bacon on one, and then put the two together to make one big patty. Bacon makes (almost) everything better!

      Yes...yes it does. I like to do that with blue cheese...and bacon.

    My favorite grilled food is shrimp on the barbie. Nothing too tough about that--but I do have a great Thai marinade that is so awesome. Here's the recipe for my Thai curry shrimp on the barbie!

    Ingredients
    wooden (or metal) skewers (I prefer wooden). You should soak the wooden ones in water for a while before putting them on the grill so they don't burn.
    •12-15 fresh prawns, shelled (tails can be left on).
    •4 key limes or 1 regular lime (cut into pieces)
    •Optional (but this is good): red and green bell peppers, cut into strips wide enough for skewering, and 1 pkg. cherry tomatoes

    Curry Sauce
    •1/2 stalk lemon grass, sliced (with bulb and tough outer leaves removed)
    •1-2 yellow chillies, depending on desired spice level (or substitue 1-2 green or red chillies)
    •2 shallots (or 1 small cooking onion)
    •1 thumb-size piece of galangal (see Glossary) or ginger, peeled and sliced
    •3 cloves garlic

    Directions
    Place curry sauce ingredients in a food processor (or blender). Process well, then do a taste test, adding a teaspoon or more fish sauce (instead of salt) if necessary.

    Stir prawns (and vegetables if using) into sauce, combining well.

    Skewer prawns (and vegetables) onto wooden skewers and set on a plate for grilling.

    Grill these shrimp outdoors on your BBQ until pink and plump, OR broil in the oven.

    Serve and wait for all the compliments telling you just how much YOU EFFEN ROCK!

    I can tell ya about the veggies tho. We just did it yesterday @ my aunts house.

    Fresh corn on cob,still in husk (she has a garden) squash,onion(I cut it to make it look like a blossom) mushroooms. Get alluminum foil put butter in on it season with what ever u like, put veggies in. Roll up individually and put it in the coals be fore u put the grate on the grill. Then bbq ur meat yummmmmmmmy 2 ur tummy

    here is a real easy recipe for lamb steaks:
    Rub your meat down with some fresh rosemary, minced garlic, salt and cover with red onion slices. Let it sit in the fridge for an hour and then toss it on the grill for about 7min per side.
    SUPER good.

    I am all for grilled whole chicken split in half and drenched in BBQ sauce. It's not fancy, but it's so good.

      Actually, I meant to say you split the chicken in half first, then you grill it normally. It's pretty quick since it's split. I am not the grill cook. I assisted with this at a BBQ last year, but have not repeated it since. I think it was done after about 20 minutes, and flipped a couple times.

    lime and basil tilapia

    this is beyond easy. in large plastic bag combine 4 tbs oil, I use an extra virgin olive oil, 2 tbs lime juice, lime zest, 4 tbs bourbon, and fresh chopped basil. seal, shake to mix, add fish and marinate in fridge 1 -2 hrs. grill on hot grill appx. 4 -5 minutes serve with a lt green salad or fresh melon salad

    Nothing too exotic for me .. just burgers, steak and chicken with HART's secret BBQ Saucing technique ..

    Although, it's great when we have company we spice it up..

    - BBQpan
    - dollar size potatoes
    - margarine
    - onions
    - Hy's seasoning salt
    - garlic salt
    - dill
    - covered while BBQing

    I like to grill stuffed chicken breasts. Slice the chicken lengthwise, stuff with your favorite veggies and cheeses (I like using sun dried tomatoes, peppers, and spinach, and provolone or pepperjack or - well I can't have cheese anymore so I guess nothing now )

    Marinate the stuffed mess in your favorite garlic oriented sauce (I like a garlic pepper Italian style marinade for zing) for at least one hour - it's bettr if you do it over night, though.

    Grill to perfection!

    Tip* tie the chicken together with a cooking string, or use a grill tool that squashes the chicken and controls the innards so you can flip without losing all the good stuff to the coals. You can also wrap them individually with tinfoil.

    And grilled potatoes - yum! take a good sized potato, slice width wise several time, stuff sliced onion, cheese of your choice, and parmesean in between each slice. Wrap in tinfoil, and bake. it's delicious!

      I think it's be a three way tie then. The stuff's cereal crack, one taste and you crave more. Sometimes my kids never knew we had it in the house. I will share just about anything but not my Reeses cereal.

    My husband's the grilla in this family.

    Here's his famous pork chops. We buy the loin whole and slice it into chops ourselves. We usu. cut them thick -- about 1.5 inches.

    2-4 boneless pork chops
    1 small handful fresh rosemary leaves, stripped from stem
    Balsamic vinegar
    Peanut oil (or Canola, if you prefer)

    Lightly chop or crush the rosemary. Mix 1 tsp. Balsamic vinegar per chop, 1 tbs. oil per chop, and the rosemary in a gallon-size zip-lock bag. Place chops in bag, squeeze out the air and seal. Move the chops around to ensure the marinade is in contact with all surfaces.

    Marinate in the refrigerator 3-6 hours or on your counter top for 1 hour. [Remove refrigerated chops to counter 30 minutes before cooking so they can come to room temperature.]

    Fire up the grill. Grill chops 4 inches from the heat, 7 minutes. Turn and complete cooking until interior temperature reaches 170C/77F. Rest the chops for at least 10 minutes before cutting so they stay nice & juicy.

    has anyone used pure maple syrup in any grilling recipes? I just bought some of the pure stuff and I'm tihnking it might be nice with pork

    Have you every tried coconut milk in your curry sauce?

    It is often used in Thai cooking and I think it adds a lovely flavor to the curry.

    Bacon wrapped cheese stuffed Jalapeneos. That and anything not nailed down. Fruit, Veggies, meat in any form. We got to the creek and grill out all summer. My favorite is stuffed hambugers. I stuff them with cheese, bacon, mustard, ketchup and pickles. Then all I have to do is put mayo, tomatoe and lettuce on the bun.
