So, after being thoroughly stuffed with 4th of July picnic goodies, you're craving a light meal for dinner, right?

Well, here's a terrific suggestion...French onion soup. It's not difficult to make, tastes great, but is light enough to use for dinner on those evenings that a heavy meal just won't do.

The soup freezes well (freeze just the soup, though...not the bread and cheese!) so you can make a large batch, freeze half of it, and have it again for a first course at a holiday dinner or with sandwiches for a tasty lunch.

      Pureed carrot? or clear?

      Try the onion soup...if you strain the soup to get just the broth, it makes a fabulous liquid for making gravy!

    Smoky bacon, scallop and sweet corn chowder.

    Make a basic rue (butter, flour, milk, salt'n'pepper) in a pan
    Add a dash of liquid smoke to rue
    Fry off bacon and scallops in a separate pan / add to rue when cooked.
    Add a small tin of sweet/creamed corn to the mix.
    Add a pinch of chili powder.
    Add grated cheese (optional)

    Serve with home made garlic bread

      I got a good one for potato soup! We have that at least once a week w/ cornbread

      Holly, I love potato soup. My grandmother used to grow her own potatoes and we made soup from the ones that were too little to put in the cook pot (this was before "baby potatoes" were popular).

      You can use potato soup as a fabulous base for either potato leek soup or New England Clam Chowder. I'll be putting up my recipes for all three before long.

    Have you ever tried substituting Asiago-Parmesan cheese for Gruyere?
    Beloved prefers it.

      Asiago is unavailable in SA and I prefer the nuttier flavour of Gruyere over Parmesan. My favourite for this is smoked Gruyere, but it can be tough to find.

      I have just heard of an Italian deli, though...I was able to get Scarmozza cheese from them at a food fair recently (made a brilliant substitute for provolone in a Philly CheeseSteak!) and maybe they'll have asiago...

    Here goes....

    Red potatoes (peel and quarter,or cut how u like)
    I like to boil the pot. In chicken broth. (I usually get 3 boxes,and add water)
    I cut up a couple of onions and leave them in rings,bc it cooks apart.
    Bring that to a boil and let it simmer until pot are fork tender

    Now while pot are boiling I pop 3 or 4 bieces of bacon on microwave and cook it until really crispy. Then put in papaer towel and crush it up (usually 1min on high per each,piece of bacon)
    Cut some green onion
    Grate some cheddar cheese....then
    Get some cornstarch,and add some water stir it up until there is no lumps (thickening agent)
    When your pot are done turn the soup down to barely a simmer,pour in cornstarch mixture, and you keep adding it until you like the thickness of the soup,but don't add to much because as it cools it gets thicker.
    Now this is when I add all my seasonings to
    Salt,pepper,garlic & onion powter,mrs.dash,parsley,seasoning salt ,and really just anything you like.....
    Top with bacon,cheese,and green onion......yummy 2 ur tummy!!!!!

      I like the bacon idea...my husband won't touch green onions, though (odd, cos he eats most everything!)

      Mine is made with a cream (actually, evap milk) base.

      Here's something for you to try: instead of cornstarch for a thickening agent, try some instant potato flakes or potato flour. Works wonderfully!

      Sometimes those who won't eat green onion will eat scallions.
      I use arrowroot as a thickener and it works well too.
