I love Mexican Food! What's your favourite?

I've missed two days of posting due to computer problems...this is a new computer and, according to the tech, is faulty from the factory
She's got it back to working more reliably until we can get it into the shop, and so I was able to get a new recipe posted: my favourite Mexican dish, Chile Verde (svcooks.blogspot.com/2009/06/chili-verde.html)
Man, I love this stuff, especially in burritos. But it makes a fabulous dinner...ladle it over rice for a filling meal...and if you have any leftovers (we never do), it does freeze well.
One ingredient, tomatillos, is part of the authentic Chile Verde, but only available in limited areas. Rest assured, the dish tastes wonderful without them, so don't worry if tomatillos are not available in your town.

The best enchilada sauce is the mole (pronounced mo-lay for those of you who think we are talking about the burrowing animal!) sauce, a very complex piece of cookery!
Now that I don't have to put in 40 hours + a commute, I may just experiment with making some.
I do love enchiladas, but use a tinned sauce just because of the time involved in the homemade ones. Tamales are delish, but I've never had the time to learn to make them, and here in SA I can't get masa harina anyway.
Anybody wanna send Sweet Violet a Christmas prezzie this year, a bag of Masa Harina would be welcome! (kidding!!) -
I don't have a favorite ethnic food, I like a little from various types.
My actual favorite dish/meal is likely a pan fried Lake Trout with some Rice Pilaf.
I know, kind of boring.-
You can punch up that trout by making it Trout Amandine, which goes wonderfully with rice pilaf.
Get some sliced almonds. Put butter in a skillet and heat until the butter starts to brown. Add the almonds and stir them around to brown a bit. Take care not to let the butter burn.
Remove from heat and pour almonds and browned butter over the cooked trout. Voila! Trout Amandine!!

I've only ever had them in Mexico...they didn't seem to be a menu item in the Mexican restaurants I frequented.
If you like Huevos Rancheros, you might like Egg Chutney (which is a curry that contains eggs). It sounded gross the first time I heard of it, but it is actually quite tasty! It will be a future offering on the recipe blog.

We make chicken fajitas at our place, marinating the chicken in lime juice and fresh oregano and grilling. OMG, it is absolutely mi favorita. We also make fresh salsa with tomato, garlic, lime, onion, cilantro, and chiles... it's addictive.

I don't really do much Chinese cooking, and I am just learning Indian. My husband is Indian and his mother is helping me. So far I have mastered roti, South Indian-style chicken curry, mince curry, aloo gobi, cauliflower curry, and egg chutney. Not much, I know, but it's a start!

You know, I grew up in San Diego and as a child we had "housekeepers" from Mexico, but I never even heard of a chimichanga (or a flauta) until I moved to Tucson in the early 70s (chimichangas were actually invented in Arizona, not Mexico). It was then that I discovered that there are regional Mexican foods, just as there are regional American foods. Since that time I have learned that Sonoran food (those lovely mole sauces!) and Jalisco-style foods are my favourites.
But I don't make deep fried foods, so I don't make chimichangas (or flautas)...although considering the quality of Mexican food in South Africa (dismal!) I may get myself a fryer...

Not sure what all the mexican food you all listed here. But I check the food one by one with google image to find out. However, I like spicy! I have try mexican pizza before...
I like many traditional food here in Malaysia like satay, nasi lemak, char kew tiau, roti canai, bak kut teh and so on.
