But then again so is bison burgers. Yum!<br />
<br />
But if you really want to make a special dish, the bison and fresh diced tomatoes, bell peppers, mushrooms, onions all cooked together.  And then used like a sauce over egg noodles or white/brown rice is really good, topped with parmesan or cheddar cheese is a nice finishing touch, served with sourdough bread and butter.  Yummy.. <br />

				<description><![CDATA[<p>You say "bison" and I think Manitoba. <br />

<br />
<ul><strong> Tomato Bison Burger Casserole </strong> <br />
2 pounds ground bison<br />
4 cups macaroni, boiled until tender<br />
2 tsp salt<br />
1 large onion, chopped<br />
½ cup celery, chopped<br />
¼ cup brown sugar<br />
1 tsp Dry mustard<br />
1 tin tomato soup (yuck - I would use a small can of tomato paste instead)<br />
1 quart canned tomatoes, whipped in blender<br />
1 tin mushrooms, optional<br />
Brown bison. Add onion and celery and cook until vegetables are tender. Add cooked macaroni, seasonings, tomato soup, tomatoes and mushrooms. Stir together and transfer to casserole dish. Bake at 350 degrees for 30 - 45 minutes or until heated through. </ul><br />
<ul><strong> Bison Chili</strong> <br />
1 tbsp canola oil<br />
1 cup chopped onion<br />
1 green pepper, diced<br />
½ cup celery<br />
2 lb ground bison<br />
2 garlic cloves, minced<br />
1 can (28 oz.) diced plum tomatoes<br />
1 can (14 oz.) tomato sauce<br />
1 can (5 ½ oz.) tomato paste<br />
3 tbsp chili powder<br />
1 bay leaf<br />
1 tsp dry oregano<br />
1 tsp dry basil<br />
½ tsp ground cumin<br />
Put oil in large saucepan. Add onion, green pepper and celery and sauté over medium heat until onion begins to soften. Add bison. Stir and cook until meat is browned.<br />
Stir in garlic, sauces and spices. Bring to a boil. Reduce heat and simmer for 30 minutes. Remove bay leaf and serve.</ul></p>]]></description>

				<description><![CDATA[<p>I actually agree with csi for a change.  Bison meatloaf is really good.  When I lived in Montana I ate a lot of bison because of all the hunting up there.  First, take some diced baby carrots, onions & peppers and saute them in some olive oil with some herbs of your choosing.  Then add that to the bison, along with an egg, worcesteshire sauce, breadcrumbs, and cranberries and bake at around 400 for about 45 minutes or so (until meatloaf is at 180 degrees).  Delicious.  The veggies in the meatloaf make it a little more moist--bison is less fatty than regular beef or pork so it can use a little moisturizing.  The cranberries add a nice bit of sweet--hard to explain, but they work.  <br />

				<description><![CDATA[<p>A traditional Scottish dish is mince and tatties. It is just beef mince fried up with onions, carrot, peas then simmered in gravy and served with mashed tatties (potato). <br />

Pretty basic fare but it would mean you would get the flavour of the bison.<br />

If you really wanted to go for the authentic Scottish experience you could have neeps with it as well (boiled mashed turnip (swede) as the mashed tatties.</p>]]></description>

Then do salisbury steaks. or cottage pie. <br />

I actually did a deer cottage pie a while back, with mushrooms in it instead of the usual peas and stuff. Was great.</p>]]></description>

Try to find some wild mushrooms. Chantarelles or something to put on top. And use tarragon, rosemary, thyme in a well ground spice mix. <br />

It's really good. <br />

Other than that, salisbury steaks. Or even a "Cottage pie" variety can be fantastic.</p>]]></description>
