    In terms of consistent quality output, I have to go with The Beatles. Out of their whole catalog, I can only think of about three songs that I really don't like to listen to.

    Los Lobos, the best rock and roll band in America for 25 years... See 'em live and get the recordings. Great guitar players (more than two!), great percussion, sax. Everyone seems to play many instruments, including the guitarron and requinto and other traditional Mexican instruments. Killer originals and covers (Cinnamon Girl is a frequent part of live shows).
