Years ago, in the depths of my checkered past, I was married to a man of Sicilian descent. His father thought I was trying to poison his son with the concoction I called spaghetti sauce and he took it upon himself to teach me to make it the right way. Well...the right way as far as his family traditions went!

      Yah, pasta remains my all-time favourite dish.

      Upcoming recipes include Quickie Pasta Sauce, Stuffed Shells, Lasagne, Ravioli, meatballs, and how to cook Italian sausage and pasta properly...all the way Old Joe taught me to do it (except for the Quickie Sauce...he must roll in his grave every time I make that!).

      That's good to hear. My husband makes his own pasta sometimes. It's delicious. The more recipe sharing that goes on here at BC the more I feel like bringing my private cooking blog out of "private" mode.

      yeah! there really are not too many cooking blogs but there sure are a lot of people who can cook!

      I wish I could find a Chinese cooking blog...especially one that would show me how to make potstickers and shu mai. How I love dim sum...and nobody makes it in South Africa!

      I would like to learn how to make fresh pasta. There is a place by me that makes freaking awesome fresh pasta (market style of place) but it is really expensive so I want to learn how to make my own. I tried to make ravioli once and it was a disaster.

      I don't do it much, however, since I can buy fresh pasta in local markets.

      If you don't have a pasta rolling machine, you are going to need REALLY strong upper body muscles. Good homemade pasta is made with semolina flour, which is very elastic and you have to be very, very strong to roll it out by hand! I usually don't bother with making raviolis anymore because of that, and I have a pasta extruder attachment for my Kitchen Aid for the tube and ribbon pastas.

      I'll be posting a recipe for a Florentine filling that can be used in ravioli, stuffed shells and canneloni and I'll include the pasta recipe with that.

      If you will tell me what went wrong with your ravioli, I may be able to tell you how to fix it.

      I work in an italian american bistro. I've got pasta coming out of my ears. But I still like a good sauce, which is imo, the best part of any dish... am checking it out...

      Ask Mrs. CA to get it for you for your b'day or some other occasion. That's how I got my Kitchen Aid...all my friends thought it was a VERY unromantic Valentine's present, but it was exactly what I asked for!
