Now that the drama is apparently over with my blogs, it is time to get the next recipe posted.

Who doesn't like mashed potatoes? My late husband's mother made the most fabulous mashed potatoes I had ever eaten and it took me years to get the secret out of her

      I just did and noticed the cream cheese! I don't use butter though and use low fat cream cheese. I should be skipping the cream cheese entirely and just mash the potatoes with the roasted garlic, parsley and a little chicken stock, but I admit to loving the creaminess.

    Mashed Potatoes with garlic seems to be my choice.

    It's healthy too, garlic contains strong anti-oxidants.

    Take a bulb of garlic, roast in the oven. Then squeeze the resulting paste into the mashed potatoes, along with butter and fresh chopped flat leaf parsley.

    Oh my, I love the recipe. I also use roasted garlic,
    and cream cheese or heavy cream if I don't have cream cheese.

    Love mashed potatoes! Plain, Herbed, Garlic And Cheesy! If I really have to choose, maybe I would prefer garlic but its really hard to choose.
