I have always loved shrimp...even as a child, it was one of my favourite foods.

So I love shrimp recipes, particularly those in which the shrimps appear in generous portions.

Have you ever had Shrimp Creole? Did you like it? The nice thing about Shrimp Creole is that there's lots of shrimp in it and, if you like it spicy hot, you can make it that way. And if you don't like it spicy hot, you can make it that way too. Just give it enough spice for flavour but not enough to overwhelm the taste of those fat, juicy shrimps!

Shrimp Creole is a dish from Cajun cuisine ?

Yes, it is. You can make it as hot or as mild as you like, although an authentic recipe will be pretty spicy.

I always wanted to try Cajun cuisine. It sounds intriguing.

This is an easy one. Check the blog for the recipe and scroll down for another Cajun recipe, a little more involved, but just as tasty!

Generous portions, like an entire plate with a mountain of jumbo shrimp on it?

    Do want.

This makes two very generous portions or 4 "normal" portions and has a pound of shrimp in it. You can always add more...there's nothing in the recipe that will be ruined with extra shrimp!

      Mmmmm...I know that feeling!

And I like to use big fat shrimps...none of those broken bits or little cocktail shrimp for me.

Good thing I don't have cholesterol issues, huh?

This is an easy recipe...I used to make it when I came home from work and was too tired to really cook. Of course, I used frozen shrimp that was already shelled and deveined, and frozen okra that I had already sliced up.

Oh my goodness, that recipe looks amazing!!! This may be the best recipe on your blog (so far!). I love, love, love shrimp but my cholesterol does not. i have been told my bad cholesterol, while still in the normal range, is too high in proportion to my good cholesterol. I was quite disappointed at this news as shrimp and bacon are two of my favorite foods. I love shrimp in all varieties: shrimp cocktail, shrimp boil, shrimp tempura, shrimp salad, shrimp po-boys, spicy shrimp maki. I feel like Bubba from Forrest Gump right now.

    *sigh*

I also love okra. Okra is fantastic.

Well, I don't think shrimp once in a while will put your cholesterol into overdrive...

However, this dish can be made with chunks of lobster tail or fresh crab (which are OK, cholesterol-wise) or even sauteed chunks of chicken breast. I love it best with shrimp, but my late husband was Jewish and while he would eat shellfish, his mother would not. So I've made it with chicken when she was coming over for dinner and it tasted fabulous!

I know it's all about moderation. I will have to try this as a treat. Maybe when I find a new job, I will make a big batch of it and have a little dinner party with my friends!
