    My favorite pairings with chocolate are chocolate covered cherries, peanut butter (Reese's, Snickers, Butterfingers), and coconut (Mounds, coconut cream eggs at Easter).

      If you can find the Ritter Sport coconut chocolate bar from Europe, it's the best in its league! It makes Mounds taste like sawdust, in comparison. Trust me, you'll love it!

      I fiend for both chocolate covered cherries and peanut butter cups. Try this sometime: buy a nice cherry dessert wine, rim the glass in molten chocolate and drink like a margarita. It's out of this world.

      I like your Ah-nuld impersonation at the end. Reminds me of the Jib Jab cartoons. Have you ever tried those Terry's Chocolate Oranges that you whack on a table and all the slices fall apart into your eager little hands? Really good orange-chocolate, in my humble opinion.

    Is it just me, or are American candy bars getting crummier? I think the chocolate is waxier as the food manufacturers water down their candy coatings. In Europe, they still use real unadulterated chocolate, because I don't think Europeans would put up with such nonsense. Any thoughts?

    On Friday, I made some strawberries dipped in chocolate for our special dessert and they were absolutely fabulous. The tart of the strawberry with the rich sweetness of the dark chocolate--heaven.

      You know, when my family was grieving over the loss of a loved one, a kind person advised us, "Cheese and chocolate; cheese and chocolate." In a strange way, it did help a bit. So I totally get the combo. Also, what would a great Italian meal be without the final flourish of a dessert tiramisu?

      Sounds like the basis of a good Mexican mole -- another rich Chocolate-filled savory sauce. Let's not forget, the Aztecs started drinking chocolate with chilies as a pick me up before battle. The sacred drink was restricted to the elite warrior class and the royal family. So you are really making chocolate extremely Old School. Good luck with the recipe!

    More chocolate, silly! Heh. erm...OK my serious answer is that I love a good rich cup of a coffee with very sweet chocolates (cuts the sugary bits) and a nice sweet champagne with darker, bitter chocolates.

    And a lovely eiswine goes fantastically with hardy German chocolate

    I prefer lattes or cafe con leches with mild chocolates (or with nutty, chocolaty aromatic cigars) and rich straight American style coffee with cake chocolate foods. I like a nice bucchi, espresso or machiato with minty chocolates, and cappuccinos with lighter cookie like chocolates or chocolate dipped biscotti.

    I prefer fruity chocolates with hot chai lattes (it's Christmas in a cup!), and rich dark mint or straight chocolates with straight black coffee and either whiskey or Di'sorono.

    SO that's what goes best with chocolate

      OK, hold on...I'm writing this all down. You've given me several ideas for future chocolate drink-pairings. I'm a sucker for scalding hot cup of coffee and a few chocolate truffles. But not Godiva. Godiva is overrated, and waxy.

      Also - to add to your list, a semi-sweet Scandinavian mousse and fruit dessert goes really well with a mild and smooth pinot noir.

      They were selling chocolate-covered bacon at our state fair this year. I was so intrigued, I went back on 18 years of being a vegetarian to give it a try - tragicoptimist.wordpress.com/2008/08/30/this-may-be-the-most-shocking-thing... - it was surprisingly good, a great combination of chocolate and salt, though after finishing my cup of it, I didn't need anymore. Maybe next year.

      Wow! That state fair bacon IS some extreme food eating. The chocolate covered bacon sounds like its something akin to a chocolate covered potato chip, which falls decidedly into the "good-weird" category. Still, I'm not sure I'd rush out and stock up on either...

      The Boy Scouts annual popcorn drive produces these giant tins of Chocolate popcorn. Order it sometime. The popcorn has the whole salty-sweet thing going for it, yes indeed-y.

      If I had to choose one, I would say the peanut M&Ms. Have you ever tried the organic Sundrop brand of hard coated chocolate bites? Similar, but superior.

      You get Sundrops in the bulk bins of a gourmet or natural foods grocery store. It's worth the trip just to find them.

      Good point... There are many versions of this....something akin to a Turtle, but with out the complication of caramel. Also heavenly. And when in desperation for this nut/chocolate combo, our American 'Mr. Goodbar' does nicely. But too often the chocolate used in this kind of combination is too sweet. Somewhere out there though, perhaps in a 'Sundrop'... is the perfect taste!

    The best things to go with chocolate are bitter hatred and jealousy. And almonds. Almonds are good too.

      Almonds are at least the Earl of the Nut family, or maybe the Viscount. I think filberts are probably the King, flavor-wise, but I haven't fully worked out the Nut Royal hierarchy yet. But the chocolate is supposed to be a balm for what ails you. Do you like bitter chocolate with the bitterness? I mean, do you match the mood to the flavor? And is your dragon avatar spewing green flames or just spewing?

      Yup! Nutella. That's the creamy magic inside Ferrero Rocher. Nutella on toast. Nutella on crepes. Nutella on French bread. Nutella with sliced bananas. Or right off the spoon. There's really no wrong way to eat it. It's all good. In Europe, kids eat it like kids in the U.S. devour peanut butter.

      I can see the food-wine pairing you're after. Maybe a dark red table wine, or a Cinsault, with the right fruit and acidity, would be excellent. Also, it would be worth experimenting with regional U.S. fruit wines outside of California. Maybe something from Washington state or Colorado...

      Chocolate kisses, especially the mint ones at Christmas. The mints are underrated, as are Andes mints. And no doubt about it, chocolate is sensuous. That's been a recurring theme in many of the posts, here. Do you use chocolate Chapstick or lipbalm, perchance?

      I also love, love, love, chocolate creme brulee. How does it get better? A man with a flaming torch and chocolate dessert.

      Stillthinking, I am with you about creme brule, but in this once instance, I say no chocolate. Not even raspberries or mint on top, just the sugar crust and the creamy filling. Why mess with a good thing?

      But I am surprised no one has said that chocolate mousse is their favorite. Any mousse lovers, out there?

      LynneaUrania, the mousse beats the living tar out of the chocolate bunny, any day! Chocolate mousse is like a fluffy whipped pudding of extra dense chocolate, but it's not runny like pudding. It's made with egg yolks, egg whites, sugar, and is full of air. As Wikipedia puts it, "The egg whites are beaten before being incorporated into the other ingredients to produce a light and fluffy yet extremely rich confection." Sadly, it's usually served in a small cup, due to its richness. Personally, I think it should be eaten by the vat.

    Chocolate is actually good on meat. A good piece of steak prepared with dark cocoa powder and plenty of pepper and honey to balance it all out. (as well as a few other ingredients) is great!

    dark chocolate, and more dark chocolate. And another. Then some milk. Or a glass or port. If I have to mix my chocolate with food, it's with vanilla ice cream or raspberries or strawberries. Otherwise, you're just messing with perfection.

      I recently finished a bar of 83% and that was great. I did try a bar of unsweetened baking chocolate and I have to admit, I still need a bit of sugar to temper the bitterness. But not too much!

    Kaluha and Dark chocolate is a great combination. Take a drink of Kaluha and hold it in your mouth and a bite of dark chocolate and let them mix together in your mouth. Damn its good.

      I think chocolate leads to sex, but I'm not sure it should be used during the act. It's like when George Castanza on "Seinfeld" tried to combine too many great things during the dirty deed, adding in a Yankees game on the radio and a pastrami sandwich all at once. He went for the trifecta, but it was a bit too much!

      What kind of coffee, fruitcake? Regular black? Personally, I prefer a nice hot double shot cappuccino with a little Swiss milk Chocolate, maybe a Lindt bar.

    I like my chocolate dark and bitter. So, my first thought was a good steak and red wine with chocolate to follow... But as I read the list, it struck me as funny not to hear about citrus & chocolate in this list.

    My husband makes the world's best dark chocolate orange cheesecake. It's simply fantastic.

    A Shot in the Dark. This espresso drink is a cup of regular drip coffee with a shot of espresso in it. The sharp of the espresso and the dull of the coffee even each other out completely for a flavor that is smooth as silk.

    Heavy cream to make ganache one part to one part ratio OR two parts chocolate to one part heavy cream for making truffles.

    Chop up chocolate place into a stainless steel bowl. Heat the heavy cream just to a boil. Carefully pour the hot cream very slowly, into the middle of the chocolate. Using a wooden spoon, slowly stir in the cream to blend and melt the chocolate. Voila. Easy as that.
