YUMMMMM! Stuffed pasta: shells and cannelloni

Stuffed pasta is perfect for special occasions. It takes a bit more work than spaghetti and meatballs, but the reward of this fabulous tasting dish is more than worth the extra effort.
Large pasta shells are not available in South Africa, so I have discovered that cannelloni...3" long pasta tubes with a diameter of about 1"...make an acceptable substitute. This is a lovely, creamy, dish that has been a special occasion favourite in my family for more than 30 years. The base recipe is vegetarian, but there is no reason you cannot use a meat sauce with it!

Do you make your own?
I have found that most cannelloni I get commercially is either full of unseasoned cheese, which is bland, or stuffed with spinach and just enough white sauce to hold it together...and it tastes like hay!
When I couldn't find shells here I looked around for a stuffable pasta and found cannelloni in the stores. The shell stuffing is fabulous in a cannelloni tube!
