Quick, light, delicious...something to delight the taste buds without feeling stuffed afterwards. This is a quick to fix light soup that can be made more hearty by adding some of the variations shown at the end of the recipe.

    I hope this doesn't put me in the wrong gender, but. . . For my taste I would add the chicken, green onions and garlic, or the sliced cabbage and sprouts. Looks good. Avocado on top sounds good as well.

    I might also add a touch of cayenne or something, not too much, but yeah, something.

      Well, Dennis, a lot of gents get their "nothing too heavy" days as well, although probably for different reasons then we females do! Mebbe you had a big lunch and just want something light for dinner, or it's too hot to spend much time standing over the stove?

      It really is a good soup, and it can be as light or as filling as you want it to be. And it really is excellent with sliced green onion in it and a little avo floated on top!

    That looks really yummy, SV--I think I'm going to actually make that for lunch today. I have all the ingredients.

      Most people do, Melinda! It's perfect for one of those "I have nothing to fix for lunch and I don't wanna go out..." days!

      You can use two eggs, BTW, to make it heartier!

      Yes--I plan to use two eggs for lunch today. I will put in a few of the garnishes you mentioned also--to make it a little more 'ooomph.'

      Float a bit of avo on top. Makes an amazing addition!

      Melinda, if you ever get down to Fremont, you MUST try the Chicken and Rice soup at La Casita. It has huge chunks of chicken, a big piece of avo for garnish, and a bunch of veggies, and it is the best soup I have ever eaten in my life. Better than anything I can make!

      Mnnnnn. I actually have avocados also because I am making guacamole tonight to go with our shrimp fajitas.

    The only thing I do diffrent is add a little onion or dried mushrooms every once in a while or I thicken the stock with a little corn starch. (They do that is a resturant around here and it is wonderful when I do not feel good)

        I like your two additions and will be trying them, so thanks for posting them.

        P.S.
        You can use arrowroot as a thickener if you want. It works very well and IMO it doesn't leave the residual taste that corn starch does.

      Sounds like you made a hearty version! It's a good base recipe for heartier soups, but light and delicate if you want something not too filling.
