Vegetarian, gluten-free, and utterly delicious!

Having been "economically challenged" most of my life, I've learned a lot of ways to use leftovers to make a new dish or even a whole meal. Some of these dishes are so good, however, that I will actually "fake" some leftovers (cook the food up fresh, then refrigerate it overnight) just so I can make what used to be a frugal, don't-waste-the-leftovers dish!
One of those dishes is Colcannon, a side dish ordinarily made from leftover potatoes and cabbage. There are numerous ways to prepare it, but my favourite variation is to use steamed baby potatoes (skin on) and brussels sprouts. Even my husband, who does not list either sprouts or cabbage among his favourites, will have second helpings of this dish. The butter, cabbage, potatoes and onions have a synergistic effect on each other, combining to make a sweet-tasting dish in which none of the flavours dominate but a whole new taste is created.

Looks very delectable. I like leftovers too. I am not ashamed to admit it. When I go to a party with friends I always ask for their leftovers...hhmmm...
