What are you eating this weekend?

The start of the summer alfresco dining season is upon us...at least those of us in the Northern Hemisphere. Time for outdoor entertaining, picnics, tailgate parties and snacking by the pool.
I have posted a pair of fabulous dips for your summer entertaining: a sensational fresh salsa and a deliciously creamy guacamole. I lived in a heavily-Hispanic part of town in California for 30 years, and these are what the salsa and guacamole in the local taquerias (where the menus were in Spanish!) tasted like!
Quick to fix and so tasty you'd better make a double batch if you expect to have any left at the end of the day!

I'm likely to make a roast chicken this weekend. My way of doing it is to take a whole lemon, cut the skin of the fruit with a sharp knife sufficiently so the juice will burst out - then stuff it up the bird. I then coat the surface of the bird with tarragon. Sometimes I'll take strips of bacon and drape it over the chicken in order to add an additional flavour.
After, I'll strip the carcass of meat and make stock; the leftover meat and stock turn into a very good base for risotto. -
I think I'm going to make Pizza, I haven't made it in a while. I'll probably just make a combo, or use some left over meat from dinner.

You've gotten me hungry for salsa now...
I have to think about what I'll be having. I don't do a lot of cooking as it's just me here.-
This salsa is really easy to make.
I just posted a recipe for homemade flour tortillas...why not make some quesadillas with the tortillas and some of this salsa? Just put some grated cheese on a tortilla, a couple of spoonfuls of the salsa, fold the tortilla in half and heat until the cheese melts. YUMMY! Serve with some guacamole. Perfect for one or two people!
Hmmm...mebbe I should write up all the quesadilla variations for tomorrow's recipe post...what do you think?

We traveled to Chicago, so we ate out. We stopped at this place called i cream, that makes your ice cream to order. Literally. They poured the ingredients in an industrial mixer and flash froze it with liquid nitrogen. Looked like Han Solo in Carbonite and the ice cream it made was very light and almost crystaline, like lightly compacted snow... except with crushed Oreos

I've been in a state of exhaustion after moving this weekend, so I've mostly crammed whatever I could find...most of it not particularly healthy...into my mouth all weekend.
Starting tomorrow, I'll try to do better....
