timethief..I found a great recipe for you. I wrote to the person who orginally posted it a few years back, asking for permission to copy it. He has not answered.

If I don't hear from him in another week or so I will give his website credit and post it. It sounds really good.

Oh, I make mash with cream cheese and roasted garlic all the time (well, at least a couple of times a week). My husband loves it.

The yellow potato salad is a family recipe that I can remember my greatgrandmother making. I ordinarily don't like potato salad, it is just boring (bland potato + bland mayo = bland, boring dish). My recipe uses egg, potato, onion, sliced black olives and the dressing includes mustard. Tangy, nice combination between crisp and smooth, and tasty. I always have to make it huge batches as otherwise it disappears almost as soon as I put it on the table and then everybody complains there wasn't enough for second helpings.

When I moved to South Africa I made it for my new mother-in-law who promptly wrote down the recipe and added it to her repertoire. There is a whole family of Indian people here who now eat potato salad with their curry! and they are passing the recipe on to friends!

I was going to say mashed with either gravy or butter, then I started thinking of homemade hash browns or roasted new potatoes with garlic. Potatoes basically rule.

For those of you that have never used Yukon Gold Potatoes:
Yellow Potatoes: The most common of the yellow-fleshed potatoes is the Yukon Gold. They are usually round, medium-sized, dense and have a creamy yellow flesh. They are an all-purpose variety, good for baking, boiling or frying, but their naturally buttery flavor really makes wonderful mashed potatoes.

I like stuffed potato skins, maybe cheese and bacon or perhaps sour cream and chives.

Good I'm looking forward to it. The kind of potatoes used does make a huge difference to the texture, and most of all, to the flavor. Yukon Gold are good however, there is a delightful small golden fleshed Danish potato (name unknown) that is excellent for latkes too. It's my first choice.

Poutine is a French fast food. It basicall is french fries with cheese curds and brown gravy.

Anniepoh seems to like it. And she is a food expert. But she is also from up north...so who knows. We shall see how the voting goes!!

I have no idea how you would call this but here's how my mom used to make them. Bake them, dice them and then fry them. Pour some garlicky butter over them and serve...yummy!

I NEVER MAKE THIS ONE ONE

Potato Pancakes Recipe
2 pounds mealy russet potatoes, peeled
1 medium onion, coarsely grated
2 eggs, lightly beaten
2 tablespoons matzo meal, or as needed
salt and pepper to taste
1 dash sugar to encourage browning
vegetable oil for frying
sour cream, yogurt, and/or applesauce

Grate potatoes. Squeeze to remove as much moisture as possible. Combine potatoes, onion, eggs, matzo meal, salt, pepper and sugar. Take half of this mixture and puree in a food processor or blender, then recombine it with the remaining mixture. Add more matzo meal if needed to make a thick batter. Heat the oil in a heavy frying pan. You will probably get by on a slick about 1/8 inch deep, especially in a nonstick pan, but the deeper and hotter the oil the crisper the pancake. Use a large spoon to drop portions of the mixture into the hot oil. For thicker pancakes leave the batter mounded up high, for thinner, lacier and crispier edged disks, flatten the batter with a spoon as soon as you add it to the pan. Cook until golden brown, about 4 minutes, then turn and repeat on the other side. Latkes don't take kindly to being turned too many times and become rather heavy as they continue to flip. When golden on both sides, remove to paper towels and drain for a moment before serving. Accompany hot latkes with sour cream, yogurt and/or applesauce.
