What did you have for dinner tonight? Since it was raining I cooked a hearty casserole.


Meatball Hash Brown Bake

2 Eggs
3/4 Cup Saltine Crackers -- crushed (about 20 crackers)
6 Cloves Garlic -- 6 to 8 cloves, minced
2 Teaspoons Salt -- divided
1 1/2 Teaspoons Pepper -- divided
1 Pound Lean Ground Beef
10 3/4 Oz Condensed Cream of Chicken Soup -- undiluted
8 Ounces Sour Cream
4 Ounces Shredded Cheddar Cheese
1 Large Onion -- chopped
30 Ounces Hash Browns, Frozen -- thawed

In a bowl, lightly beat eggs. Stir in cracker crumbs, garlic, 1
teaspoon salt and 1/2 teaspoon pepper. Add beef; mix well. Shape into 1-in. balls. In a covered skillet over low heat, cook meatballs in a small amount of water until browned; drain. In a bowl, combine soup, sour cream, cheese, onion and remaining salt and pepper. With paper towels, pat hash browns dry. Stir into the soup mixture. Transfer to a greased 13x9 baking dish. Arrange meatballs over top, pressing lightly into mixture. Cover and bake at 350 for 45 minutes. Uncover; bake 15 minutes more or until meat is no longer pink and potatoes are tender. Yield: 8

    put on a crock pot of field peas and country ham this morning. They are ready and smell great. Will serve with corn bread.

      as long as the cheese is not out of a can we are all ok. My 5 year old likes it out of the can but he uses it as silly string

    I'm making Chicken Catorie for supper tonight. Had made spaghetti sauce last night and we just didn't get into it so I figure why not combine it all.

      I used the hashbrowns with onion and bell pepper instead of the shredded this time. I liked it better. I make the hashbrown casserole all the time with the shredded potatoes. The hambuger made it so much better.

    Bell peppers would certainly be a nice touch! We're Irish so anything with tators and meat goes over pretty well around here lol ..
