Yummy! Breakfast Burritos!

This is one way to get a decent breakfast into the family as they are running out the door...or as they all pile into the car for a day's outing. Easy to fix, deliciously satisfying, there have been more than a few mornings that saw me creeping through Silicon Valley commute traffic with one hand full of steering wheel, the other one clutching one of these burritos.

I am a vegetarian and my husband has been asking me to prepare vegetarian burritos but I have no idea how to. May be you can give me some tips

I assume, as a vegetarian, you eat eggs and dairy?
Omit the bacon from this recipe for a vegetarian-friendly breakfast burrito.
Go to the burrito recipe (svcooks.blogspot.com/2009/06/burritos-original-wrap.html ) and in the recipe, omit the meat and double the amount of beans/refried beans.
In the bean recipe, omit the meat and cook according to recipe.
The basic burrito is just a tortilla wrapped around some refried beans. Add some whole beans, some rice, avo or guacamole, salsa and grated cheese and you have a classic vegetarian burrito! -
You can put just about anything you like into a burrito, as long as it isn't too wet.
Look in your fridge and take out your leftovers...wrap them in a tortilla, add some salsa or chilies, and you have a burrito! I think some Chinese fried rice would be a great burrito filler, along with some salsa, beans and veg!

Can't have them today, I just wrapped up my Chili leftovers from last night :-) I finally got around to make it. I had to leave out certain elements but it came out great everyone was pleased.
I grounded up Turkey cutlets instead of beef and used red and black beans, with cajun spice for kick.
Maybe burritos this weekend for a breakfast surprise for everyone.-
Isn't that the fabulous thing about chili...how it is so easily customized to individual tastes? Oh, and turkey makes great chili...if you want to increase the fibre content or decrease the meat, use firm tofu in equal parts with the ground meat...or just leave out the meat altogether and use the tofu in its place.
Trust me...I don't even like tofu and I like it in the chili!

2 months ago I would have used sausage and cheese in anything with a 406 cholesterol count I have to stay away for now. Sorry Tofu, does not work in any of my menus, even when I have miso soup on the out, I pick it out of it. The texture turns me off.
I brought the chili wraps into work today any my Korean pals feel in love with it.-
I don't like tofu either, but this is what I discovered: if you use firm tofu and chop it into little bits while frying it with the onion and spices, once it browns you can't tell what it is. You can't tell the texture because it is chopped into little crumbles. You can cut the cholesterol by using ground turkey and draining it thoroughly, and you can cut it further by using half ground turkey and half tofu...just make sure to chop the tofu into tiny little bits along with the turkey meat.
You can also make the chili vegetarian.

Sorry SV, can't talk me into it, put that and Liver on the very short list of things I won't eat.
I'm gonna try the burrito with a feta cheese this weekend. Give it a little Greek flavor.
