As many know I have a jamaican recipe site. I will be occasionally putting some recipes here for those who in the group ..and people viewing to enjoy.
A quick dish when you come home from work and need a quick pick me up.
Ingredients
1 lb of pasta shells (or you can use macaroni shells too)
1 oz butter
1 peeled onion (small)
2 tsp tomato puree
1 tsp of curry (to taste)
cut up some mango slices (finely chopped)
10 fluid oz mayonnaise
1ripe medium fresh pineapple
salt and pepper
1 lb skinned and boneless cooked chicken
(optional flaked almonds) (use as garnish)
Method
Add pasta to a large pan of lightly salted boiling water. Drain and run under cold water. Drain again and place in a large serving bowl.
Meanwhile melt the butter in a heavy based pan. add the onion, and cook for 5 minutes . Stir in the pineapple and tomato puree. then cook for 1 minute. Remove the the heat and all to cool.
Blend the mango and the mayonnaise together in a small bowl. add any leftover pinepples to this mixture (plus a little of the juice). Season the mayonnaise to taste with the salt and the pepper.
Stir in the pasta and the pineapple and tomato puree mixture. Toss lightly Sprinkle with the almond slices
