<br />
2 medium eggplants, peeled 	 <br />
18 oz Ricotta cheese 	 <br />
2 Tbs olive oil 	 <br />
2 cups tomato sauce 	 <br />
1/2 cup heavy cream 	 <br />
1/2 tsp salt 	 <br />
 <br />
Preheat oven to 400 degrees F.<br />
Peel eggplant and slice into 12 pieces, 1/4-inch thick. Slice from top to bottom. Lay slices on a paper towel and sprinkle salt on them to allow water to drain from the slices.<br />
In skillet, cook eggplant slices with olive oil. Lay on paper towel to let the oil drain. Roll 1-1/2 ounce of Ricotta cheese in each slice. Pour tomato sauce in casserole and neatly place manicotti in rows on top of the sauce.<br />
Bake in oven at 400 degrees F until hot all the way through. Remove manicotti from pan onto serving dish.<br />
SAUCE: Put pan of tomato sauce on stove and add heavy cream until the sauce is pink. Simmer 2 or 3 minutes. Pour sauce over manicotti and sprinkle with Parmesan cheese.<br />

12 ounces smoked or barbecued meat<br />
2 cups shredded Cheddar cheese<br />
1 cup sautéed red bell peppers, julienne<br />
1 cup sautéed onions, julienne<br />
1 cup sautéed sliced mushrooms<br />
Barbecue sauce<br />

Sauté onions, peppers and mushrooms and place in bowl.<br />
<br />
Shred or chop your meat and coat lightly with barbecue sauce.<br />
<br />
Preheat nonstick skillet on medium. Spray pan with Pam. Place on tortilla in pan and cover entire tortilla with layer of cheese. Top cheese with smoked sauced meat and sautéed vegetables. Cover everything with another tortilla. Spray top of second tortilla with Pam and turn over after the<br />
bottom is browned. When the bottom of the second tortilla is browned, remove from pan and cut<br />
into wedges. Repeat process until all tortillas are used.<br />
<br />
Serve on a large platter with salsa, sour cream and guacamole<br />
<br />

4 lbs. Peaches, peeled, sliced<br />
2 Cups Frozen, pitted Sour Cherries<br />
1 tablespoon Lemon Juice<br />
3/4 Cup Sugar<br />
2 tablespoons All-purpose Flour<br />
1/2 teaspoon Ground Cinnamon<br />
<br />
Streusel Topping:<br />
2 Cups unsifted all-purpose Flour<br />
1/4 Cup packed Light-Brown Sugar<br />
1/2 teaspoon Baking Powder<br />
1/4 Teaspoon Salt<br />
3/4 Cup Cold unsalted Butter<br />
<br />
Preheat oven to 350°F. Pour boiling water over the peaches and let <br />
stand for 1-2 minutes.  Peel off the skin and chop into small chunks.<br />
Toss fruits and lemon juice, add mixed sugar, flour and cinnamon to fruit & toss. Make topping by combining<br />
dry ingredients with butter. Crumble mixture over fruit. Bake<br />
45 minutes until bubbly and browned. <br />
Makes 12 servings.<br />

<strong>Ruby Red Grapefruit & Avocado Salad</strong><br />
<br />
2 medium ruby red grapefruits, diced (reserve juice)<br />
2 ripe avocados, diced<br />
1 tsp raw honey<br />
handful of pomegranate seeds<br />
sprig of fresh mint leaves, rough chopped<br />
<br />
1. Using a sharp knife, cut the peel and white pith from grapefruits and dice, saving the juice. Pit, peel and dice avocados. Place grapefruit and avocado in a large salad bowl and sprinkle with pomegranate seeds.<br />
<br />
2. Add honey and mint to reserved grapefruit juice and mix well. Drizzle over salad and gently toss before serving.<br />

1 tube (16-1/2 ounces) refrigerated sugar cookie dough<br />
3 tablespoons instant pistachio pudding<br />
2 tablespoon finely chopped pistachios<br />
6 drops green food coloring<br />
1/4 cup unsweetened cocoa powder<br />
2 tablespoons light-brown sugar<br />

<br />
Directions<br />
<br />
<br />
1. Divide cookie dough in half. Into one half knead in the pistachio pudding, chopped pistachio nuts and green food coloring. Shape into a small rectangle; wrap in plastic and refrigerate for 1 hour. <br />
<br />
2. Into the remaining dough, knead in the cocoa powder and the brown sugar. Shape into a small rectangle, wrap in plastic and refrigerate 1 hour <br />
<br />
3. Roll out the pistachio dough between 2 sheets of waxed paper to a 12 x 8-inch rectangle. Repeat with the chocolate dough. <br />
<br />
4. Remove top sheet of waxed paper from the chocolate dough. Remove the top sheet of waxed paper from the pistachio dough and place on top of the chocolate dough. 1 1/2 cups skim milk<br />
2 tablespoons flour<br />
1/2 teaspoon salt<br />
1/4 teaspoon garlic powder<br />
1/4 teaspoon cayenne pepper<br />
1/2 cup shredded low fat cheddar cheese<br />

Peel and slice potatoes thinly. In a saucepan, combine milk, flour, salt, garlic powder and cayenne pepper and cook over<br />
medium heat until sauce thickens. Layer casserole dish with potato slices. Spoon half of sauce over slices and repeat with remaining potatoes and sauce. Cover and bake in oven preheated at 350 degrees for 50 minutes to an hour.<br />

<br />
5 cups cubed cornbread or crumbled corn muffins<br />
3 cups diced fresh tomatoes<br />
1 cup diced sweet onion<br />
1 cup diced green bell pepper<br />
1/4 cup sweet pickle relish<br />
1/2 pound sliced bacon, cooked and crumbled<br />
3/4 cup mayonnaise<br />
1/4 cup sweet pickle juice<br />
Freshly grated Parmesan cheese<br />
<br />
Place cornbread in a large salad bowl. Combine tomatoes, onion, green pepper, relish, and bacon. Spoon on top of cornbread.<br />
<br />
Mix mayonnaise and pickle juice; pour over vegetables. Sprinkle with Parmesan. Chill before serving.<br />
<br />
Serves 10 to 12.<br />

Mashed Turnips with Nutmeg<br />
<br />
6 pounds turnips, peeled, sliced into 1/2−inch rounds<br />
1/2 cup (1 stick) butter, melted<br />
1/4 teaspoon ground nutmeg<br />
<br />
Preheat oven to 325°F. Toss turnips and butter in 13 x 9 x 2−inch glass<br />
baking dish. Sprinkle turnips with salt and pepper. Cover dish with foil.<br />
Bake until tender, about 1 hour. Remove from oven and mash coarsely.<br />
Stir in nutmeg. Season to taste with salt and pepper.<br />
