Greetings,

Well, I'm sure you have all heard enough about politics with
the election and all, so I'll get right down to business.
I have a couple new recipes for your collection and a tease
about some exciting news that I will announce in next weeks
newsletter. Next week I will tell you all about my new
cooking website. I know you will love it!
Now on to the recipes...

Sweet Potato Quiche
===========================

4 eggs
1 cup milk
1/2 teaspoon salt
1/4 teaspoon black pepper
1/2 cup cheddar cheese, grated
1 sweet potato, peeled and sliced very thin
1/2 onion, chopped
1 clove garlic, minced
1/4 cup green pepper, chopped
1/4 cup red pepper, chopped
1/2 cup frozen corn
1 medium tomato, chopped
1 frozen pie crust
olive oil

Saute the onion, garlic and peppers in a little olive. Once
the onions are translucent, turn off the heat and add the
chopped tomato. In a bowl, whisk the eggs, then slowly add
the milk. Add the salt and pepper to the egg mixture.
Spoon 3/4 of the onion-pepper mixture onto the bottom of the
pie crust. Layer slices of sweet potato on top. Sprinkle
half of the cheese and corn on top of the sweet potato. Add
another layer of sweet potato slices. Top with the rest of
the onion-pepper mixture and corn. Sprinkle the rest of the
cheese on top of that. Pour the egg mixture over everything.
Bake at 375 degrees F for about 45 minutes uncovered.

Oriental Cucumber Salad
============================================

1 English cucumber
1 tablespoon Rice vinegar
1 tablespoon Soy sauce
1 tablespoon Vegetable oil
1/2 teaspoon Oriental sesame oil
1/2 teaspoon Salt
1/2 teaspoon Sugar
1/4 teaspoon Hot Chinese chili paste
1 Small clove garlic,minced

Trim ends off cucumber and cut into 1 inch chunks. Combine
rice vinegar with soy sauce, vegetable oil, sesame oil, salt,
sugar, hot chili paste and garlic.
Mix dressing with cucumbers and serve at room temperature.
Refrigerate if you don't plan on serving immediately.
