Tortilla-Beef Casserole<br />
============================================<br />
<br />
1 1/2 lb ground beef<br />
1 large onion, chopped<br />
4 garlic cloves, chopped (or more)<br />
1 green bell pepper, chopped<br />
1 tablespoon chili powder<br />
1 teaspoon cumin<br />
3 to 6 cilantro sprigs<br />
1 cup olives, chopped<br />
1 lb tomatoes<br />
1 1/4 cup enchilada sauce<br />
8 corn tortillas<br />
1/2 lb cheddar cheese, grated<br />
1/2 lb monterey jack cheese, grated<br />
1 cup corn chips, crushed<br />
<br />
Brown ground beef; drain any excess fat. Add onion, garlic and bell pepper; cook until soft.<br />
Cut tomatoes into chunks and add to beef mixture (including liquid).<br />
Add enchilada sauce, chili powder, cumin and cilantro. Add salt<br />
and pepper to taste. Bring to a boil; reduce heat and simmer<br />
uncovered for 20 minutes. Grease a 3-quart casserole. Steam (or<br />
fry) tortillas. Put approx. 1/3 of the meat mixture in the casserole<br />
dish followed by a layer of tortillas, cheese and olives. Repeat<br />
twice. Sprinkle crushed corn chips around the edges and bake at<br />
350 degrees F. for 20 minutes or until heated through. Cut into<br />
wedges.<br />

Taco Bell Cheesy Fiesta Potatoes<br />

1/2 tsp. of garlic powder<br />
1/4 tsp. of ground cumin<br />
2 lbs. of white potatoes, peeled and cubed to 1" cubes<br />
2 tbsp. of butter<br />
2 tbsp. of olive oil<br />
salt and pepper, to taste<br />
1 1/4 c. of cubed Velveeta cheese<br />
Tabasco sauce, to taste<br />
1/2 c. of sour cream, divided<br />
1 green onion, chopping only the green part<br />
<br />
Preheat your oven to 475 degrees. While your oven is preheating, you can get your mix together in a Zoploc bag. Mix the garlic powder and cumin together; add the cubed potatoes, seal the Ziploc, and toss it all together until all of your potato chunks are coated evenly.<br />
<br />
In a large, heavy skillet over medium heat melt the oil and butter together. Add the seasoned potato chunks in and cook, stirring frequently, until they're a nice, golden brown, about 10 minutes; cover and cook an additional 10 minutes or until potatoes are tender then season to taste with salt and pepper.<br />
<br />
Transfer the sauteed potatoes to a non-stick baking sheet and bake at 475 degrees for 10 minutes, stirring occasionally, until potatoes are nice and crisp.<br />
<br />
When your potatoes are almost done baking, put your cubed Velveeta, salsa, and Tabasco into a microwave-safe bowl (a large casserole Pyrex would work) and microwave for it 1 minute; stir and microwave it for another minute; stir it again and microwave, again, for another whole minute, and then stir until smooth.<br />
<br />
For each serving, place some potatoes in a bowl, then pour over 1/4 of the melted Velveeta cheese sauce, top with some sour cream, then sprinkle with the chopped green onion.<br />

Turkey Vegetable Fajitas<br />
============================================<br />
<br />
4 Flour Tortilla, 10"<br />
3 Sweet Peppers, Green, Red - cut into strips<br />
1/4 Cup Soy Sauce<br />
2 tablespoons Sugar<br />
1 Onion, Medium, Chopped<br />
2 tablespoons Lemon Juice<br />
3 Garlic, Minced<br />
1 tablespoon Cornstarch<br />
1 tablespoon Olive Oil<br />
1/4 teaspoon Red Pepper, Crushed<br />
12 Oz Turkey Breast, Thin Strips<br />
<br />
Wrap tortillas in foil; warm in a 300 degree F oven about 10 minutes. Combine soy sauce, <br />
<br />
sugar, lemon juice, corn starch, and crushed red pepper in a bowl. Spray a cold large <br />
<br />
skillet with nonstick coating; preheat. Add sweet peppers, onion and garlic. Stir fry 3 to 4 <br />
<br />
minutes. Remove vegetables from skillet. Add oil to the skillet. Stir fry turkey for 3 to 4 <br />
<br />
minutes or until no longer pink. Stir soy sauce mixture; add to skillet. Cook and stir until <br />
<br />
bubbly. Add vegetables; heat through. Spoon turkey mixture onto tortillas; roll up.<br />
<br />

Cheese Stuffed Tomatos<br />

6 large tomatoes<br />
1 cup cooked white rice<br />
2 cups shredded Swiss cheese<br />
2 tablespoons butter<br />
1/2 cup onion, chopped<br />
1/4 cup celery, chopped<br />
1/2 cup mushrooms, sliced<br />
1 teaspoon salt<br />
1/4 teaspoon marjoram<br />
1/4 teaspoon black pepper<br />
<br />
Preheat oven to 350 degrees F.  Grease a shallow baking dish.  Cut off top 1/4-inch of each <br />
<br />
tomato and set the tops aside.  Scoop out the pulp from each tomato.  Drain the excess <br />
<br />
liquid from pulp and set aside.  Heat butter in a skillet.  Add onion and celery and cook <br />
<br />
over medium heat until onions become translucent.  In a mixing bowl, combine onion and <br />
<br />
celery with rice, cheese, tomato pulp, mushrooms, salt, marjoram and black pepper.  Spoon <br />
<br />
the mixture into each tomato shells.  Replace the tops.  Place in a baking dish and back for <br />
<br />
about 15 minutes.<br />

<br />
Bunch of Fennel leaves and/or seeds<br />

3 tomatoes sliced thin<br />

Pumpkin Pancakes<br />
============================================<br />
<br />
2 cups Bisquick mix<br />
2 Tbs Packed light brown sugar<br />
2 tsp Ground cinnamon<br />
12 oz Carnation Evaporated Milk - (1 can), undiluted<br />
1 tsp Ground allspice<br />
1/2 cup Libby's Solid Pack Pumpkin<br />
2 Tbs Vegetable oil<br />
2 Eggs<br />
1 tsp Vanilla extract<br />
<br />
In a large mixer bowl, combine biscuit mix, sugar, cinnamon, and allspice. <br />
Add evaporated milk, pumpkin, oil, eggs, and vanilla; beat until smooth. <br />
Pour 1/4 to 1/2 cup batter (depending on sizes of pancake desired) onto <br />
heated and lightly greased griddle. Cook until top surface is bubbly and<br />
edges are dry. Turn, cook until golden. Keep pancakes warm. Serve with <br />
syrup or honey. <br />

Lemon Soup<br />

6 cups chicken broth<br />
1/2 cup orzo<br />
2 eggs<br />
1 tablespoon water<br />
2 tablespoons lemon juice<br />
Salt and white pepper, to taste<br />

Bring broth to a boil.  Add orzo and cook until tender about 10 minutes.  Remove from heat.  In a bowl, beat <br />

eggs until frothy.  Add water to lemon juice and slowly add to egg mixture.  Very slowly dribble hot broth <br />
<br />
to egg and lemon mixture beating continuously until you have added a cup or more of broth.  Next, pour egg <br />
<br />
mixture into remaining broth stirring constantly so as not to curdle.  Season to taste and serve <br />
<br />
immediately. <br />

Pan-Fried Crab Cakes<br />
============================================<br />
<br />
1 extra large egg, beaten<br />
1 tablespoon mayonnaise<br />
1/4 teaspoon curry powder<br />
3-4 drops hot pepper sauce<br />
1 t Worcestershire sauce<br />
1 tablespoon lemon juice<br />
1/8 teaspoon cayenne pepper<br />
1/2 teaspoon paprika<br />
1/4 teaspoon dry mustard<br />
salt & pepper<br />
1 lb. fresh lump crabmeat<br />
3-5 tablespoon bread crumbs<br />
4-6 tablespoon corn or peanut oil<br />
<br />
Combine egg, mayonnaise and seasoning.<br />
Add crabmeat and enough breadcrumbs to absorb excess moisture. Stir <br />
carefully to blend. Mixture should be firm to hold together.<br />
Form 6 patties and place on wax-paper, uncovered, for 15 or 20<br />
minutes to dry slightly.<br />
Heat oil in large skillet and saute over medium heat until golden<br />
brown. Turn and brown on second side.<br />

Hot German Potato Salad<br />

4 Medium Potatoes<br />
1/2 teaspoon Salt<br />
3 Slices Bacon, chopped<br />
1/2 teaspoon Dill<br />
Pepper, to taste<br />
1 Medium Onion, chopped<br />
1/2 Cup Water<br />
1 tablespoon Flour<br />
1/4 Cup Vinegar<br />
1 tablespoon Sugar<br />
<br />
Peel potatoes and cut into small chunks.  Boil in salted <br />
water until tender.   Cook bacon in a skillet until brown. <br />
Drain bacon, reserving fat in skillet. Cook and stir onion <br />
in fat until tender. Stir in flour, sugar, salt, dill and <br />
pepper. Cook over low heat, stirring constantly, until <br />
mixture is bubbly; remove from heat. Stir in water and <br />
vinegar. Heat to boiling, stirring constantly. Boil and <br />
stir 1 minute; remove from heat. Cut warm potatoes in <br />
1/4-inch slices. Stir potatoes and bacon into hot mixture. <br />
Heat until hot and bubbly, stirring gently to coat potato <br />
slices.<br />

After a short break, I am back with new recipes just for you.<br />
On August 16, my mother passed away after a long battle with <br />
cancer.  As you can imagine, things have been tough since then.<br />
I'm finally getting back into the swing of things and I'm so<br />
happy to finally have the time to write this message to you.<br />
<br />
This week, I will keep it simple with some new recipes and minor <br />
updates.  Next week I have some stories about my recent vacation<br />
to Virginia Beach and a review on an exciting new kitchen gadget.<br />
<br />

<br />
============================================<br />
Crockpot Beef & Peppers<br />
============================================<br />
<br />
2 pounds round steak -- lean<br />
2 green peppers -- sliced thin<br />
2 tablespoons dried onions -- minced<br />
 -or- 1/2 minced fresh small onion<br />
1 cup beef broth<br />
2 tablespoons low sodium soy sauce<br />
1/2 teaspoon ground ginger<br />
1 garlic clove -- minced<br />
1 teaspoon      Worcestershire sauce<br />
<br />
Cut the steak into serving size pieces. If desired you can brown <br />
the meat in a little hot oil before adding to crockpot. Place the thinly <br />
sliced pepper rings in bottom of crockpot, reserving a few to place on top <br />
of meat if desired. (Vegetables cook better when placed on bottom of pot.) <br />
Arrange the meat on pepper, careful to not stack one piece directly on top <br />
of another. Mix all other ingredients and pour over meat and peppers.<br />
Cover and cook on low for 8-10 hours or on high for about 4 hours. <br />
Serve with mashed potatoes and simply seasoned vegetables.<br />

2 (8 oz.) packages cream cheese, softened<br />

1 large can cherry pie filling<br />

Beat cream cheese, sugar, eggs, lemon juice and vanilla until <br />
light and fluffy.  Line muffin pans with paper baking cups <br />
and place vanilla wafer in bottom of each cup.  Fill cups 2/3 <br />
full with mixture.  Bake 15 to 20 minutes or until set at 375 <br />
degrees F.  Top each with 1 tablespoon cherry pie filling.  <br />

				<description><![CDATA[<p>Ingredients:<br />
4 cups bite sized crispy corn squares cereal<br />
2 cups bite sized crispy wheat squares cereal<br />
2 cups pretzel sticks<br />
2 cups Spanish peanuts or mixed nuts<br />
1/2 cup butter, melted<br />
1 tablespoon Worcestershire sauce<br />
1/8 teaspoon hot pepper sauce<br />
1 teaspoon salt<br />
1/4 teaspoon garlic powder<br />
Method:<br />
1.Heat oven to 325F.<br />
2.In large bowl, combine cereals, pretzel sticks and peanuts.<br />
3.In small bowl, combine butter, Worcestershire sauce, hot pepper sauce, salt and garlic powder.<br />
4.Pour seasoning mixture over cereal mixture; toss to coat.<br />
5.Spread in ungreased 15 x 10 x 1 inch baking pan.<br />
6.Bake at 325F for 25 to 30 minutes or until lightly toasted, stirring occasionally.<br />
Makes 12 cups.<br />

ARBY'S JAMOCHA SHAKE<br />
<br />
1 cup cold coffee<br />
1 cup low-fat milk<br />
3 tablespoons granulated sugar<br />
3 cups vanilla ice cream<br />
3 tablespoons chocolate syrup<br />
<br />
Combine the coffee, milk, and sugar in a blender and blend <br />
for 15 seconds or until the sugar is dissolved.<br />
Add ice cream, and chocolate syrup then blend until smooth <br />
and creamy.<br />
Pour drink into two glasses.<br />

Cajun Steaks with Mango Salsa<br />
============================================<br />
<br />
1 1/2 teaspoons Cajun seasoning<br />
4 thin 6-ounce top round steaks<br />
2 cups mesclun greens<br />
<br />
Mango Salsa:<br />
1 large mango, chopped coarsely<br />
2 medium tomatoes, seeded, chopped coarsely<br />
1 small red onion, chopped finely<br />
1 clove garlic, chopped<br />
2 tablespoons finely shredded fresh basil<br />
1 tablespoon balsamic vinegar<br />
<br />
Prepare the mango salsa by mixing all ingredients in a bowl.  <br />
Set aside.  Sprinkle the seasoning over the beef, cook on a <br />
pre-heated grill until browned on both sides.  Place one <br />
steak on each plate.  Top with mesclun greens and mango salsa.<br />

Greek Chicken<br />
============================================<br />
<br />
6 skinless chicken breasts<br />
1 large can tomato sauce<br />
1 small can tomato puree<br />
1 can sliced mushrooms<br />
1 can ripe olives<br />
1 tablespoon garlic<br />
1 tablespoon lemon juice<br />
1 teaspoon oregano<br />
1 onion, chopped<br />
1/2 cup wine or brandy (optional)<br />
2 cups uncooked rice<br />
Salt to taste<br />
<br />
Wash and remove fat from chicken. Bake in 350 degrees F <br />
oven for about an hour.  Meanwhile, combine all other <br />
ingredients except rice. Put chicken and sauce in a <br />
crock pot on LOW heat and cook for at least 4 hours to <br />
blend flavors.  Before serving, cook rice according to <br />
directions.  Serve chicken and sauce over rice.<br />

I hope you are doing well today.  I'm looking<br />
forward to having a nice relaxing weekend...<br />
hopefully.  As always, I have some new recipes for you this week.  <br />

First, on a serious note, I wanted to reach out<br />
to some of my readers for some advice.  My mother<br />
has been battling lung and bone cancer for the past <br />
few years.  Recently she has not been eating much at<br />
all.  I've been experimenting with protein shakes, <br />
fruit, bread...  But the most I will get is a bite or <br />
two.  I need some ideas of some things that will get <br />
her lots of nutrition in little doses without upsetting <br />
her stomach.  Any suggestions are appreciated.<br />

Cajun Shrimp<br />

<br />
1 lb. shrimp<br />
1/4 tsp. cayenne pepper<br />
1 tsp. black pepper<br />
1/2 tsp. salt<br />
1/2 tsp. red chile pepper flakes<br />
1/2 tsp. thyme<br />
1/2 tsp. rosemary<br />
1/8 tsp. oregano<br />
3 Tbsp. butter<br />
1 1/2 tsp. garlic, minced<br />
1 tsp. Worcestershire sauce<br />
1/2 cup beer(room temperature)<br />
<br />
Peel, de-vein, and rinse shrimp. Grind seasonings<br />
in mortar and pestle.<br />
In large skillet over high heat, melt butter, add<br />
garlic, seasonings, and Worcestershire sauce. When <br />
bubbly, add shrimp.  Cook 2 minutes, stirring and <br />
shaking the skillet. Add beer and cook 3 minutes. <br />
Remove shrimp and reduce sauce, adjusting seasoning. <br />
Serve shrimp over rice with sauce spooned over the top.<br />

The Best Pizza Burger<br />

1 package of frozen Texas toast slices<br />
1 3/4 lbs ground beef<br />
1 cup pizza sauce, divided<br />
18 slices pepperoni<br />
12 slices mozzarella cheese, divided<br />
1 cup sliced fresh mushrooms<br />
1 tablespoon butter<br />
<br />
Top with:<br />
sliced green pepper<br />
ripe olives<br />
grated Parmesan cheese <br />
 <br />
Prepare the six Texas toast slices according to<br />
the package directions.  Meanwhile, shape the beef <br />
into 12 thin patties.<br />
Top six patties with 1 tablespoon pizza sauce,<br />
three slices of pepperoni, and one slice mozzarella <br />
cheese.  Top with remaining patties and press the <br />
edges together.<br />
Grill, covered, over medium heat for about 8<br />
minutes on each side.<br />
Meanwhile in a skillet, saute the mushrooms in<br />
butter.  Top each burger with a spoonful of pizza <br />
sauce and one cheese slice.  Cover and cook for 3 <br />
more minutes.  Top the Texas toast with green peppers,<br />
mushrooms, olives and Parmesan.<br />

Grilled Eggplant Salad<br />

 <br />
2 Eggplants - (about 7" long), halved lengthwise 	 <br />
Extra-virgin Olive oil, for brushing 	 <br />
2 Tbs Freshly squeezed lemon juice 	 <br />
1 medium Onion, minced 	 <br />
2 Tbs Olive oil 	 <br />
2 medium Tomatoes - peeled, seeded, and chopped 	 <br />
1/2 tsp Salt 	 <br />
4 Garlic cloves, minced 	 <br />
3/4 tsp Dried oregano 	 <br />
1/2 tsp Ground cumin 	 <br />
1/3 cup Chopped pimiento-stuffed green olives 	 <br />
1/4 cup Brine from olives 	 <br />
1/2 cup Chopped celery 	 <br />
 <br />
Prepare the grill, and when the coals are hot, brush cut side of eggplant halves with oil. Set on grill rack, brushed with oil, about 4 to 6 inches from heat source. Grill until flesh is soft, about 5 to 7minutes; eggplant will char. Brush eggplant with oil, turn over, and continue grilling until tender, about 5 to 7 minutes longer. Cool eggplant. Scoop pulp from eggplant skins and spoon into a bowl. Mix in lemon juice, onion, 2 tablespoons oil, and tomatoes. Season with remaining ingredients. Cover lightly and refrigerate until ready to serve. At serving time, toss eggplant salad and serve. Good with crudites, crackers, or toast points. This recipe serves 6.<br />

Pasta Salad with Lemon-Pesto Dressing<br />

1 lb  cavatappi, corkscrew pasta  	 <br />
Coarse salt, as needed 	 <br />
1 cup prepared pesto sauce 	 <br />
1 lemon, juiced, zested 	 <br />
1/4 cup chopped flat-leaf parsley 	 <br />
1 cup grape tomatoes, halved 	 <br />
4 scallions, chopped 	 <br />
3/4 lb ricotta salata, chopped, crumbled 	 <br />
Freshly-ground black pepper, to taste 	 <br />
 <br />
Bring a large pot of water to a boil and salt it.<br />
Place pesto, lemon zest, lemon juice, parsley, tomatoes, scallions and cheese in a large bowl.<br />
Cook pasta to al dente then cold shock it and chill it down under cold running water. Drain well. Add to mixing bowl. Combine salad and season with salt and pepper, to taste.<br />

				<description><![CDATA[<p>8 (10-inch) flour tortillas<br />
12 ounces smoked or barbecued meat<br />
2 cups shredded Cheddar cheese<br />
1 cup sautéed red bell peppers, julienne<br />
1 cup sautéed onions, julienne<br />
1 cup sautéed sliced mushrooms<br />
Barbecue sauce<br />
<br />
<br />
Sauté onions, peppers and mushrooms and place in bowl.<br />
<br />
Shred or chop your meat and coat lightly with barbecue sauce.<br />
<br />
Preheat nonstick skillet on medium. Spray pan with Pam. Place on tortilla in pan and cover entire tortilla with layer of cheese. Top cheese with smoked sauced meat and sautéed vegetables. Cover everything with another tortilla. Spray top of second tortilla with Pam and turn over after the<br />
bottom is browned. When the bottom of the second tortilla is browned, remove from pan and cut<br />
into wedges. Repeat process until all tortillas are used.<br />
<br />
Serve on a large platter with salsa, sour cream and guacamole<br />
<br />

I really can't believe how much rain we have been getting here in New York, but this weekend was finally nice and sunny, hot and humid of course.  I am still tending to my vegetable garden pests which has become a real challenge.  I just hope I can make it to harvest!  What do you have planned for the<br />
July 4th weekend?  Hope you all have a safe weekend full of friends and good food!<br />
<br />
(I've included some great recipes for your grill!<br />

Grilled Key Lime Chicken<br />
============================================<br />
<br />
3 pounds Chicken breasts; boneless, skinless<br />
1 cup Key lime juice<br />
1 tablespoon Honey<br />
3/4 cup Water<br />
1/2 teaspoon Fresh ground black pepper<br />
1/2 teaspoon Ground thyme<br />
2 tablespoons Vegetable oil<br />
1 tablespoon Fresh ginger; peel, grated<br />
<br />
Combine all ingredients except chicken in blender or food<br />
processor.  Process until combined well. Pour over chicken.<br />
Cover and let marinate in the refrigerator overnight. Cook<br />
on a hot grill, turning once, until done. Garnish with<br />
cilantro and lime slices.<br />

Jack Daniel's Grilling Sauce<br />

1/2 cup pineapple juice<br />
3 tablespoons soy sauce<br />
1−1/2 teaspoon garlic powder<br />

Combine all ingredients and mix well. Dip meat in sauce and<br />

Hi,<br />
<br />
It has been another rainy week here in NY.  My vegetable garden<br />
is crying for sunlight!  Hopefully the sun will come back for<br />
Fathers Day weekend.  Make sure you do not forget all the special<br />
dads out there.  I have included some great recipes and gift ideas<br />
in this weeks newsletter.<br />

Grilled Bourbon Steak<br />
============================================<br />
	 <br />
large/thick cut of your favorite beef steak<br />
2 large red onions<br />
1/2 cup fresh rosemary<br />
1/2 cup fresh mint leaves<br />
1/2 cup bourbon<br />
1 tablespoon salt<br />
3/4 cup to 1 cup balsamic vinegar<br />
2 cups tomato juice<br />
6 to 12 garlic cloves<br />
1/2 cup soy sauce<br />
<br />
1. Combine all of the ingredients except for the steak for the marinade <br />
in a food processor fitted with the metal blade.<br />
2. Place the tri-tip in a glass, ceramic, or plastic pan and pour the<br />
marinade over it. let sit for 2 hours at room temperature or up to 3<br />
days refrigerated.<br />
3. To grill, have the coals hot and set them on each side of a<br />
kettle-type barbecue. For a smokier flavor, add several handfuls of<br />
soaked smoke chips to the hot coals. Place the meat on the grill and<br />
cover with the lid. Grill for about 30 minutes or until a meat<br />
thermometer inserted into the center reaches 120 degrees F for rare or<br />
130 degrees F for medium..<br />

Grilled Garlic Shrimp<br />

1 1/2 lb large shrimp, peeled and deveined<br />
salt & pepper, to taste<br />
1/2 cup mixed herbs (basil, tarragon,oregano)<br />
1 clove garlic,minced<br />
1/2 teaspoon shallots,minced<br />
3 tablespoons extra virgin olive oil<br />
<br />
Preheat the grill. Sprinkle shrimp with salt and<br />
pepper. In a mixing bowl, combine herbs, garlic, shallots and shrimp.<br />
Oil a cookie sheet with olive oil, and place shrimp on pan. Grill for<br />
2-3 minutes or until pink on each side. <br />

think I need a good cup of soup! I am going to send out this <br />

Beef Shank Barley Soup<br />
============================================<br />
	 <br />
2 lbs. beef shank<br />
2 cups water<br />
1 teaspoon salt<br />
1/8 teaspoon black pepper<br />
1/8 teaspoon cayenne pepper<br />
1/3 cup celery, diced<br />
1/3 cup carrots, julienne<br />
1/3 cup onions, chopped<br />
1 quart beef stock<br />
3 tablespoons barley<br />
1/2 teaspoon Worcestershire sauce<br />
<br />
Add beef shank, water and seasonings to a large pot and <br />
simmer for about 2 hours or until tender.<br />
Pick the meat from the bones and return the meat to the <br />
stock.  Add the remaining ingredients to the pot and simmer <br />
for about 30 minutes.<br />

Hot Potato Salad With Bacon<br />
============================================<br />

6 large potatoes<br />
1 cup chopped onions<br />
3 tablespoons fresh parsley, chopped<br />
1 teaspoon salt<br />
1/4 teaspoon black pepper<br />
2/3 cup vinegar<br />
1/3 cup water<br />
1 1/2 teaspoons sugar<br />
1 egg<br />
1/3 cup salad oil<br />
6 strips bacon -- cooked to crisp<br />
<br />
Scrub potatoes and cook with skin on in enough water to cover.<br />
Cover pan and cook until tender, about 25-30 minutes. Drain potatoes and shake pan over low heat to dry potatoes. Peel and cut into about 1/4-inch pieces.<br />
Place in a large bowl and toss with the 1 cup chopped onions, chopped parsley, salt and black pepper.<br />
Combine 2/3 cup vinegar, 1/3 cup water and 1-1/2 teaspoon sugar in a small pan; heat to boiling.<br />
Place the egg into a small bowl and beat slightly with a wire whisk. Continue beating while slowly pouring in the vinegar mixture.<br />
Slowly pour in the salad oil, whisking constantly.<br />
Immediately pour this mixture over the warm potatoes and stir to coat evenly. Place the potatoes into a large skillet over low heat until heated throughout. Cook the bacon until crisp; <br />
drain, crumble and sprinkle over potatoes. Serve immediately.<br />

I hope you were able to enjoy some nice weather this past weekend.  I went out with some friends and family to celebrate my 29th birthday.  Had a few cocktails and danced to some good music.  Always good to get out and blow off some steam!  A good reminder that I'm still young at heart.<br />

Tom's Stuffed Chicken Breasts<br />
============================================<br />

4 chicken breast halves, boneless, skinless<br />
1 small zucchini, cut into 1/2" cubes<br />
1 small yellow squash, cut into 1/2" cubes<br />
2 cloves garlic, chopped fine<br />
1/2 small red onion, chopped fine<br />
1 tablespoon McCormick Garden Herb Seasoning<br />
1 tablespoon extra-virgin olive oil<br />
1 tablespoon red wine vinegar<br />
1 cup shredded Cheddar cheese<br />
1 cup bread crumbs<br />
non-stick cooking spray<br />
salt, to taste<br />
black pepper, to taste<br />
<br />
Preheat the oven to 350 degrees F.<br />
In a bowl, combine the onion, zucchini, squash, garlic, garden herb seasoning, olive oil and red wine vinegar.<br />
Season with salt and pepper, then toss to combine.  Set aside.<br />
Use a knife to butterfly each chicken breast half and then fold each breast open.<br />
Spray a baking pan with non-stick cooking spray.<br />
Take each chicken breast and put a large spoonful of the vegetable mixture on top of half of the breast.<br />
Top with some of the Cheddar cheese and fold the other half of the chicken breast on top.  Repeat for the remaining chicken breasts.<br />
Place each stuffed breast in the baking pan.  Sprinkle the bread crumbs over the top of each chicken breast. Season with salt and black pepper.<br />
Bake in the oven for 30-45 minutes depending on the size of the chicken breasts.<br />

Peach-Cherry Cobbler<br />

4 lbs. Peaches, peeled, sliced<br />
2 Cups Frozen, pitted Sour Cherries<br />
1 tablespoon Lemon Juice<br />
3/4 Cup Sugar<br />
2 tablespoons All-purpose Flour<br />
1/2 teaspoon Ground Cinnamon<br />
<br />
Streusel Topping:<br />
2 Cups unsifted all-purpose Flour<br />
1/4 Cup packed Light-Brown Sugar<br />
1/2 teaspoon Baking Powder<br />
1/4 Teaspoon Salt<br />
3/4 Cup Cold unsalted Butter<br />
<br />
Preheat oven to 350°F.<br />
Pour boiling water over the peaches & let stand 1-2 minutes.<br />
Next, peel the skins off.  Chop the peaches into small chunks.<br />
Toss peaches and cherries with lemon juice, add mixed sugar, flour and cinnamon to fruit & toss. Make topping by combining dry ingredients with butter. Crumble mixture over fruit. Bake 45 minutes until bubbly and browned.<br />
Makes 12 servings.<br />

    * 1 tablespoon liquid smoke flavoring<br />
    * 1 teaspoon garlic powder<br />

    * seasoned salt to taste<br />

 DIRECTIONS<br />
<br />
   1. Preheat a grill for high heat.<br />
   2. In a medium bowl, lightly mix together the ground beef, Worcestershire sauce, liquid smoke and garlic powder. Form into 3 patties, handling the meat minimally. Brush both sides of each patty with some oil, and season with seasoned salt.<br />
   3. Place the patties on the grill grate, and cook for about 5 minutes per side, until well done.</p>]]></description>

There's a new feature on our website called "Reader Recipes".  It's basically for anyone who wants to submit a recipe to be featured, but you can also submit your blog url and it will be included in the post.  It's basically an easy way to do a guest post without having to put too much effort into it.<br />
<br />
The first Reader Recipe just went up; you can view it at      http://www.thewickednoodle.com/?p=1831<br />
<br />
When you submit your recipe, please don't go heavy on promoting your blog, but rather heavy on promoting the actual recipe.  As you can see from the link above, we make sure to include at least one link (and in this case, two links) to your blog.  You'll get more traffic by showcasing a fantastic recipe than trying to coax people there by "selling" them - at least that's our theory!  You can write as much or as little about your recipe as you'd like!  You just have to include at least one picture of the dish itself, and you can submit up to three - including a pic of yourself if you'd like.<br />

has been amazing the past couple days!  Makes it tough to <br />
focus on work when it is so nice out.  This weekend I am <br />
going to plant my vegetable garden -- I look forward to a <br />
great crop of tomatoes this year.  Do you like to garden?  <br />

Now here are some recipes for you...<br />

Stuffed Burgers on Portabellas<br />
============================================<br />
	 <br />
1 teaspoon Worcestershire sauce<br />
1/2 teaspoon garlic salt<br />
1/2 teaspoon fresh cracked black pepper<br />
1 lb. ground beef<br />
1/2 cup shredded Cheddar cheese<br />
5 bacon strips, cooked crisp and crumbled<br />
4 portabella mushroom caps (about 4-inch diameter)<br />
1 tablespoon extra-virgin olive oil<br />
4 lettuce leaves<br />
4 tomato slices<br />
<br />
In a bowl, combine the Worcestershire sauce, garlic salt, <br />
and black pepper.  Crumble the beef over the mixture and mix <br />
well.  Shape into 8 thin patties.  Mix together the cheese <br />
and bacon.  Spoon the cheese-bacon mixture onto the center <br />
of 4 patties.  Top each with the remaining patties.  Press <br />
the edges together to seal.  Grill, covered, over medium <br />
heat for about 5-6 minutes on each side.<br />
While the burgers are cooking, remove the mushroom stems if <br />
necessary.  Brush the mushrooms with olive oil.  <br />
Grill over medium heat for about 3-4 minutes on each side.  <br />
Place each mushroom, rounded side down, on a serving plate.  <br />
Top each with a burger, lettuce and tomato.<br />

Spicy Broiled Shrimp<br />
============================================<br />
 <br />
1 lb medium size Shrimp, peeled<br />
3 tablespoons butter<br />
3 tablespoons extra-virgin olive oil <br />
3 cloves garlic, minced <br />
1/2 teaspoon ground white pepper<br />
1/2 teaspoon red pepper flakes<br />
1/4 teaspoon Cayenne pepper<br />
1/4 teaspoon dried oregano <br />
1/2 lemon (juice only)<br />
1/2 cup Parmesan cheese<br />
5 tablespoons Italian seasoned bread crumbs <br />
1/4 cup parsley - minced<br />
salt, to taste<br />
1 lb cooked linguine<br />
<br />
Melt butter with the olive oil in a saute pan that is oven <br />
safe and large enough to hold the shrimp in one thin layer.<br />
When butter/oil mixture is hot, add the garlic. Toss, don't <br />
let it burn. While it cooks, add the white pepper, red pepper <br />
flakes, oregano and Cayenne pepper, stir well. When garlic <br />
looks cooked but not brown (3 minutes), add the shrimp. Toss <br />
the shrimp about in the pan, coating with the spiced oil. <br />
Add the lemon juice and keep tossing over the heat. Quickly <br />
add the parsley, bread crumbs and Parmesan. Toss to coat <br />
completely. The shrimp should now be bright pink and cooked <br />
through.<br />
Place the pan under the broiler until cheese looks melted <br />
(1-2 minutes). Taste and adjust seasoning. Serve over pasta.<br />

				<description><![CDATA[<p>1/3 Cup olive oil<br />
1/4 Cup lime juice<br />
4 garlic cloves, minced<br />
1 tablespoon minced fresh parsley<br />
1 teaspoon ground cumin<br />
1 teaspoon dried oregano<br />
1/2 teaspoon pepper<br />
4 boneless skinless chicken breast halves (1 1/4 lb.)<br />
6 (8−inch) flour tortillas or taco shells, warmed<br />
toppings of your choice<br />
<br />
In a bowl, combine the oil, lime juice, garlic, parsley, cumin, oregano, and pepper. Add chicken and coat well with mixture. Cover and refrigerate 8 hours or overnight, turning occasionally. Drain and discard marinade.<br />
Grill chicken, uncovered, over medium heat for 5 to 7 minutes on each side<br />
or until juices run clear.<br />
Cut into thin strips; serve in tortillas or taco shells with desired toppings.<br />

Spicy Chicken Rub<br />

Rub:<br />
1 teaspoons chili powder<br />
1/2 teaspoon ground oregano<br />
1/2 teaspoon cilantro leaves, dried and crumbled<br />
1/2 teaspoon ground cayenne pepper<br />
1/2 teaspoon garlic powder<br />
1/4 teaspoon fresh ground black pepper<br />
1/4 teaspoon ground ginger<br />
1/4 teaspoon cumin<br />
<br />
Chicken:<br />
4 boneless, skinless chicken breast halves<br />
fresh lemon juice<br />
salt, to taste<br />
<br />
Mix together the spice ingredients in a small bowl.  Combine the rub mix with a small amount of water to form a paste.  Rub the chicken pieces with some lemon juice and then the paste.  Cover the chicken and refrigerate for a few hours.  Season with salt.  Grill about 10-12 minutes on each side or until cooked through.<br />

Pudding Chip Cookies<br />
============================================<br />

2 1/4 cups unsifted all-purpose flour<br />
1 tsp. baking soda<br />
1 cup butter or margarine, softened<br />
1/4 cup granulated sugar<br />
3/4 cup firmly packed light brown sugar<br />
1 pkg. (4 serving size) Jell-O vanilla flavor instant pudding & pie filling<br />
1 tsp. vanilla<br />
2 eggs<br />
1 (12 oz.) pkg. semi-sweet chocolate chips<br />
1 cup chopped nuts<br />
<br />
Mix flour with baking soda.  Combine butter, sugar, brown sugar, pudding mix and vanilla in a large bowl; beat until smooth and creamy.  Beat in eggs.  Gradually add flour mixture.  Then stir in chips and nuts.  (Batter will be stiff.)  Drop by rounded teaspoon onto ungreased baking sheets, about 2 inches apart.  Bake at 350-375 degrees F for 8-10 minutes or until lightly browned.  Remove from pan to cooling rack immediately.  Makes about 7 dozen cookies.  Store in airtight container.  <br />
