3 cups finely shredded organic cabbage 
1/2 cup finely shredded organic carrots
1/2 cup rice vinegar, divided
1/2 teaspoon salt
1 teaspoon sugar
1/3 cup thickly sliced green onions – make sure you keep the tops
1 tablespoon organic lime juice
1 tablespoon chopped fresh ginger
3 teaspoons chopped garlic
1/2 teaspoon Chinese five-spice powder
4 cups shredded cooked turkey ( dark meat is best for this sandwich)
4 long rolls .
4 teaspoons of Asian chili paste
1/4 cup fresh of organic cilantro leaves
In a medium bowl, mix the cabbage and the carrots with 1/4 cup rice vinegar, the salt, and sugar.
Set aside and let stand about 30 minutes.
In a blender or a food processor, and the remaining 1/4 cup of rice vinegar along with green onions, lime juice, ginger, garlic and five spice powder.
The mixture should become smooth after being blended or whirled
Pour the mixture into a bowl and add the turkey.
Mix to coat.
Split the long rolls lengthwise.  Leave attached at one side
Spread 1 teaspoon of chili paste on one cut side of each roll
Mound the turkey mixture on top and them place the cabbage mixture and cilantro leaves
